Crocktober – Chicken and Sweet Potato Stew

Hello Friends and Happy Fri-Yay!

Today’s Friday Foodie Feature is a recipe from

Rival Crock Pot Slow Cooker Cookbook

Ingredients:

  • 3-4 Chicken Breasts 
  • 1 can of stewed Tomatoes
  • 1 cup chicken broth
  • 1 cup of carrots
  • 2 medium sweet potatoes
  • 4 small yellow potatoes
  • 1/8 tsp nutmeg
  • 1/8 tsp ground cinnamon
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp celery seeds
  • fresh basil leaves

Dice chicken into bite size pieces, wash, peel and cube potatoes

Measure out  dry spices and spray Crock Pot with cooking spray or use liner

Add stewed tomatoes, carrots and chicken broth

Add dry seasonings, STIR, cover and cook on low for 6-8 hours

It  was a crazy Monday morning and I forgot to stir all the ingredients so it didn’t look like the picture and it cooked for 10 hours instead of 8.  However, this Indian influenced recipe was a good and satisfying meal.

Thankful Thursday OOTD

It has been another busy yet enjoyable blogging week so now it’s time to stop and give thanks.

 I am giving thanks for my health, which at times is in question

Blogging For Your Small Business

Last week I taught another class, this one was “Blogging For Your Small Business” held at The Bear Public Library, in Bear, DE.   It was the second blogging class that I had an opportunity to teach thanks to The Money School of Delaware.  There weren’t as many students enrolled in this class which allowed us more time for questions and answers as well as to do a little networking.

In attendance, along with her mother was Kayla Williams, a 9 year old who is the owner and designer of Kay-Luv-Kreations Jewelry. Kayla showcased her current line of jewelry and has already participated in several vendoring events at Churches and local Craft Shows.  This young lady is a lovely entrepreneur and her mother is certainly proud of her.  Kayla can be contacted via email at kaylagems123@aol.com.

Funny Flea Market Finds

Hello Friends and Happy Tuesday

I trust you all had an enjoyable weekend with an opportunity to be outdoors as it was simply gorgeous in our neck of the woods.  On Saturday, it was a bright, sunny 85 degrees, a perfectly glorious Indian Summer day.

I spent the day at Dutch Country Farmers Market trying to make a little extra cash, de-cluttering my nest trying to get rid of items that we no longer need, want or use anymore.  On the first Saturday of every month beginning in April and ending in November, you can rent 3 parking spaces for $15.00, to turn your trash into someone else’s treasure!

I didn’t get much of a chance to walk around which is a good thing, because I didn’t want to spend my profits nor did I need to buy more stuff only to get rid of it later.

Middletown Made For Manhattan

Hello Friends and Happy Saturday!

Last weekend I had an opportunity to attend the Ray of Sunshine Dance Recital presented and performed by dancers from the Encore Dance Academy. To say that this was no ordinary recital would be an understatement. First of all, the recital was the Senior Class Project of Kayla Green, a dancer and student at Middletown High School. Secondly it was held to benefit and bring awareness to Autism Delaware and lastly because it was an absolutely flawless Broadway-like performance by some very talented young dancers!

For two hours the audience was treated to over thirty wonderfully choreographed dances with music from every genre and decade from the 50’s to the present. The Grand Finale performance of Grease included all of the dancers and was a colorful and exciting rendition. Costume changes accompanied each of the performances and it was obvious that they had trained long and hard and had given it their best.

Three young children affected by Autism, one of which was Kayla’s young cousin and the inspiration for the project was given an opportunity to perform on stage. It was truly heart warming to watch them, so confident in themselves and enjoying the audience’s applause. Another student who is also affected by Autism gave the Closing Remarks which was also well received by an enthusiastic crowd.  To watch these kids participate in the recital who after birth wasn’t supposed to be able to walk, further emphasized the need to support Autism Awareness in the state of Delaware.

During a brief intermission packaged snacks, soda and water was available for purchase in the lobby. A Silent Auction was also held with bidding on items such as a Wine Basket, Door Wreath, Cleaning Service, and Dance Lessons, all donated by parents of Encore Dance Academy students.  All proceeds raised from this as well as from ticket sales were donated to Autism Delaware, totaling over $2000.00.

Kudos to all the dancers from the Encore Dance Academy, I fully expect one day to see your names in lights on Broadway because you definitely were Middletown Made For Manhattan last Saturday night!

Friday Foodie Feature – Fiesta Chicken

Hello Friends and Happy Crocktober Fri-Yay!

I missed a few Friday Foodie Features last month but the timing is now right with the official start of Autumn. October begins the season of football, family and comfort foods and it also means a return to my all time favorite way to make a meal and that is with the Crock Pot or Slow Cooker.

It wasn’t too long ago that there were only a few Slow Cooker Seasonings available at the grocery stores, now there are several more options available on the supermarket shelves.  I’ve tried a few of the new ones by McCormick’s and the Fiesta Chicken was a hit in my house, my men loved it – ‘ole

Ingredients:

  • 1 can of black beans
  • 2 cans of diced tomatoes
  • 1 cup frozen corn
  • 1-2 lbs or chicken thighs or breasts
  • 1 packet of McCormick’s Slow Cookers Seasoning – Fiesta Chicken

tip when a tomato begins to soften, don’t throw it away, put it in the freezer to use later in sauces or the Slow Cooker.

When I first started blogging it was just an outlet for me but with each “Like” and “Comment” it became more and more a part of me. There is no greater feeling than to be recognized and awarded for what you do, but when it comes from your own, it’s truly a blessing.
