Fish Tacos
Now that hubby has a little more energy after being chemo free since January, he has started doing more of the grocery shopping. Years ago when he would shop, nine times out of ten he would bring home items that I normally wouldn’t buy.
He would bring home foods that were high in sugar or sodium, like Lemon Meringue pies, Chocolate Chip Cookies and canned foods. But that has since changed and he is paying closer attention to product labels.
However, the one food that we both always bought was fresh fish especially Salmon. Last week hubby decided to buy a package of frozen Tilapia filets which turned out to be a perfect alternative and it made for a great quick weekend meal.
Normally I bake fish with just a little lemon juice and olive oil but this time I decided to make fish tacos and they turned out pretty good.
Using the following ingredients we had these awesome Fish Tacos for dinner
Ingredients:
3 Frozen Tilapia Filets
1 Package Ortega Fish Taco Seasoning (use 1/2 pack for less sodium intake)
1 Box Ortega Fiesta Flats
1/4 cup thinly sliced green onions (scallions)
1/4 cup chopped fresh cilantro
8 oz container of Sour Cream
3 Tablespoons Mayonnaise
1 Teaspoon Minced Garlic
1 Teaspoon grated lime rind
Juice from a small lime
Shredded Cabbage (optional)
Shredded Cheddar Cheese (optional)
Instructions:
Preheat oven to 425 degrees
Coat pan or cookie sheet with Cooking Spray
Cook fish filets in the oven according to package directions
Chop onions and cilantro then place in a bowl, pour in Fish Taco Seasoning Mix, add Sour Cream, Mayo, Grated Lime Rind and juice from the lime. Stir until mixed thoroughly.
Fish is done when it flakes easily, test with a fork before removing from the oven. Add fish to the bowl or add some of the mixture into the pan and stir lightly with a fork to coat.
I only used 3 Tilapia fillets, but you will have plenty of sauce to use for at least 12 Fish Tacos.
Divide fish evenly among Fiesta Flats and top with shredded cabbage and cheddar cheese.
Serve with Black Beans and enjoy.
What is your favorite way to cook fish?
Love fish tacos!
It has become one of my favorite dishes and now recipe.
I will have to share this with my mom. I don’t eat fish, but I’m all for shrimp tacos. #ProductReviewParty
Yes Victoria, please do share and shrimp would make this recipe even more flavorful. Enjoy the weekend.
Wow I have never had fish tacos. I am not a seafood person but you made this look amazing and I wouldn’t mind trying this at all! Great job girl! Also glad your hubby grabbed a good for him item instead of the cookies! 🙂 #productreviewparty
Yes, me too. I love seafood and of course chicken! Try it with chicken tenderloins beaten flat. Hope you are having a wonderful weekend.
YUM!!! I love me some fish tacos. I like my fish blacken and grilled. #ProductReviewParty
Yes, I love blacken fish but never made it myself – may just have to try it.
I love mexican food, but hate fish. I’ve heard that tilapia is a more mild fish though. Looks tasty!
Do you like shrimp? If so, it would be good as well.
Look REALLY good sis! I love fish tacos!

It was awesome – might try using shrimp next time. Hope all is well in your neck of the woods.
I love fish tacos! I typically choose baked fish because it is much healthier, but I like to eat them fairly simply with tarter sauce and cabbage in a soft wheat tortilla. Yumms! #ProductReviewParty
oooh that sounds yummy too – thanks for making me hungry!
