Salsa Meatloaf made with Jennie-O Ground Turkey

If you are anything like me you bought a few bags of Tortilla Chips and a jar of Salsa to celebrate Cinco de Mayo, but also like me you didn’t use the entire jar of salsa.  So there it sits in the refrigerator until the next time you want to dip in a tortilla chip … which is no time soon. 

I kept pushing that jar of salsa from one side of a shelf in the refrigerator to the other until I realized that I could probably use it to make a meatloaf or even turkey burgers instead of throwing it away.

Using the following ingredients I decided to make enough meatloaf to last two days because I had a meeting the next day after work and wouldn’t get home until late.

Ingredients

  • 3 pound package of Jennie-O Ground Turkey
  • 1 – 1/2 cups salsa
  • 1 – 1/2 cup Italian seasoned bread crumbs
  • 1 – 1/2 cup shredded Cheddar cheese
  • 3 eggs, lightly beaten
  • 1 Package of Taco Seasoning

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, mix the ground turkey, salsa, bread crumbs, cheese, eggs, and seasoning package. Transfer to a 5×9 inch loaf pan.
  3. Bake 1 hour in the preheated oven, or to a minimum internal temperature of 160 degrees F (72 degrees C).

I also made a pot of Kale which is one of my favorite veggies to serve with any meal.  To the boiling water I added one bunch of kale, Apple Cider Vinegar, chopped onions and a few sprinkles of white sugar.

Every time I make meatloaf, I think about Ralphie, the kid from “A Christmas Story” remember when he complains about this all too often served meal – meatloaf meatloaf beetloaf!

Hello friends, the Christmas countdown is on and if you haven’t finished all of your shopping you still have a few more days, but you’ll need to hurry. I only picked up a few things for my sons because all they really wanted or needed was money. I did however, buy them a few stocking stuffers and if you need some last minute ideas, check these out.

Socks Stocking Stuffer - Socks

Neither one of my sons like to wear bedroom slippers so ankle socks are great for wearing around the house. Also, because we don’t wear shoes in the house they are great to slip on when the temperature drops.

Body Wash/Deodorant

Bath Sponges make great stocking stuffers Bath Sponges are much better to use in the shower with a liquid body wash. It seems as though bath sponges or loofahs have become more popular with men as opposed to a wash cloth, I know my husband loves them.

Toothbrush & Toothpaste

toothbrush and toothpaste are great stocking stuffers A toothbrush and toothpaste are traditional stocking stuffers and you can never have too many. This set comes in a plastic pouch which is great for travel or for keeping in a dorm room.

Candy Canes

Merry Christmas Monday

Hello Friends and Happy Monday

I trust you all had a wonderful weekend and I know most of you are still on holiday which probably made it even better.  Did you hit the stores and do a little more shopping or did you just stay home and relax?  

I went back to work on Thursday but took off on Friday and it was mah-va-lous, I put on a pair of leggings, a tunic and no makeup, it was great.

Christmas 2013 was very nice, a little quieter than in previous years but never the less it was nice being together as a family.  None of us got up before 10, and after opening our gifts we spent a lazy day watching “A Christmas Story“, eating and napping.

This was my husband’s first try at stocking stuffing and I had to laugh because mine looked as though it threw up a scarf!  The Moscato was a gift from Pockets Discount Liquors and I will popping it open on New Year’s Eve.

Christmas 2

A stadium chair for those hard bleachers at Malik’s wrestling matches; Philadelphia Eagles car mats for Tayair and another jewelry box to help me organize the top of my dresser.

Christmas 3

Tayair received a US Polo Assn jacket and the Polaroid A8 Tablet that I purchased from Walgreens.

Christmas 4 Baltimore Raven’s pajama bottoms, a US Polo Assn jacket and heavy duty car mats for al-Malik.

Christmas 5

Socks (thrown a-la A Christmas Story), Old Spice and a Fireproof Safe

A bathrobe and a Gillette Set

 Earrings, animal printer slippers and a watch from my mini-men
