Hello Friends and Happy Monday, I hope you had an enjoyable weekend.
I had an online weekend…reading and commenting on Blogs…updating status’…tweeting….Instagraming…Sverving…and…creating a Facebook Campaign, “Bloggers4JCPenney“. There were several bloggers who liked the concept and submitted their posts, I hope you’ll check it out and do the same.
Saturday, I received my first Influenster VOXBOX, and will be posting a review later this week. Sunday, I went to church, wore green and cooked CornBeef, Cabbage and Potatoes for St. Patty’s Day. Tomorrow #1 son has an interview at Bank of America, he and I will be meeting his DVR job coach at 1:00. The job market is tough made even more so when you have a disability so please say a little prayer for him.
We were all hoping for another warm weekend but it seems like ‘ole Man Winter is back for one last hurrah! Wednesday is officially the first day of Spring so I’m mixing in a little bright colors with today’s all black outfit.

I love to cook dinner for my men but because I have such a long commute from Pennsylvania I am always on the lookout for easy, breezy dinner ideas. Crock pot cooking is definitely my all time favorite but I don’t mind firing up the grill or even the oven during the summer. Last night’s meal was definitely easy, breezy using chicken breasts and Kraft Fresh Take mix. In our house, no meal is complete without a starch and a veggie, I chose Zatarains rice, steamed broccoli and Marie Callenders Cheddar biscuits.

Last night’s dinner was an easy crock pot meal made with ingredients I had on hand.
Chicken Breasts, Canned Tomatoes, Tomato Sauce and Paste, Mushrooms, and McCormick Slow Cooker Seasoning Package for Italian Herb Chicken
I used a crock pot liner instead of spraying with cooking spray. Chicken in first, topped with the mushrooms. The Italian Herb dry seasonings was mixed with the cans of tomatoes and poured on top.
Covered and cooked on low for 8 hours.

In my house crock pot cooking isn’t just for fall and winter months, it’s actually more convenient and a real time saver in the warmer months. After work the last thing I want to do is turn on the oven or stove especially when it’s hot like it was yesterday. I would prefer to walk into the house to a fully prepared meal smelling good! Using the crock pot gives me more time to sit on the “back 40” or take a walk around the neighborhood.
These were the ingredients for Monday night’s dinner.
1 bag of frozen mixed vegetables
2-3 chicken breasts
1 can cream of mushroom soup
1 can of cream of chicken soup
1 jar of mushrooms
Pam Cooking Spray
You can use any cream soups
Spray Crock Pot with Pam or any cooking spray
Put in frozen veggies
Top with chicken breasts or thighs
I cut up an onion and added the mushrooms
You can use dried onions if you don’t have fresh
Sprinkled a dash of seasoning and dried thyme
Covered chicken & mushrooms with soups
Cooked on low for 7 hours
If desired, add a cup of uncooked white/brown rice when you get home
Poured in a cup of long grain rice
Turned off crock pot, stirred in rice, recovered and let sit for 30 mins while I changed my clothes
Dinner is served - I sprinkled mine with cayenne pepper
