Slow Cooked Smoked Beef Brisket | Friday Foodie Feature

Hello Friends and Happy Fri-Yay!

It is now officially Spring so this is going to be the last of the heavy Crock Pot meals.  It’s time to start eating lighter as we begin to shed the layers of clothing.  

This Friday Foodie Feature was made before St. Patrick’s Day which is why I didn’t cook Corned Beef and Cabbage on Monday – too much red meat is not good for you.

Ingredients:

  • Beef Brisket
  • Medium Onion – sliced
  • Liquid Smoke 1/2 tsp
  • South African Smoke Seasoning 1/4 tsp
  • BBQ Sauce
  • Red Potatoes – 4-5 small diced
  • 1/4 cup water

Slow Cooked Beef Brisket

 

Place brisket in resealable bag rubbed with South African Smoke seasoning, refrigerate overnight or at least 3 hours.

Sprinkle brisket with seasoning and place in resealable bag

Spray Crock Pot with cooking spray for easier cleanup.  Pour in Liquid Smoke and water, then add the brisket.

Pour in entire bottle of BarBecue sauce, add onions and potatoes, cover then cook on low 6-8 hours depending on Crock Pot style.

I sauteed some cabbage in Olive Oil sprinkled with pepper to complete this end of the winter meal.

This delicious dinner for 4 was plenty with leftovers for the next day. The tender beef brisket was shredded and used to make Tex Mex Burritos.

There’s nothing like smell or taste of a fresh ripe tomato straight from the vine, but in Delaware that only happens for a few months in the summer.  Unfortunately, my home garden didn’t yield as many as I would have liked and the frost killed the last ones hanging.  I usually have a salad for lunch so tomatoes are always on my grocery list.

Not only did I receive 2 packs of premium fresh ripe tomatoes, the package also included a few other goodies including this apron, a Tasti-Lee reusable bag, Recipe Cards, Key Chain, Bottle Opener and a tube of Chap Stick.

I began to think of the many ways in which to use the tomatoes including as a salsa or pasta sauce but my first instinct was to slice one and eat it!  That was definitely the right choice because it was juicy…juicy…juicy and so full of flavor!

Tasti-Lee tomatoes are non GMO and contain 50% more Lycopene than regular tomatoes which is definitely a health benefit.

I used another one for a salad but since I’ve never had or made baked tomatoes, I decided to give it a try.  This easy breezy recipe for Baked Parmesan Tomatoes was found online at www.eatingwell.com.

INGREDIENTS

 

  • 4 tomatoes, halved horizontally
  • 1/4 cup freshly grated Parmesan cheese
  • 1 teaspoon chopped fresh oregano
  • 1/4 teaspoon salt
  • Freshly ground pepper, to taste
  • 4 teaspoons extra-virgin olive oil

Friday Foodie Feature

I’ve decided to add something new to the blog – drumroll please…..

You know that I love to cook and in some circles am considered a Crock Pot Queen (sike), no really I just like sharing food finds on Instagram so decided to bring it to my blog.

Today’s 1st Friday Foodie Feature is

Mama Mae’s Lean Mean Collard Greens

On Sundays when I was growing up my grandmother would always cook a big pot of fresh collardskale, or mustard greens, a tradition that I have continued with my own family.  Collards were always the chosen green but I have since discovered kale which is healthier has a sweeter taste and is good when used in a breakfast smoothie.  The tradition of having vegetables with dinner also hasn’t changed but when I don’t feel like cooking fresh I’ll use canned or frozen.

I like trying new products especially if they are within my budget which was the case with the Mama Mae’s items at Shoprite.  The good thing about Mama Mae’s Lean Mean Collard Greens is that they can be cooked in the microwave, on top of the stove or in the oven but the best thing about Mama Mae’s greens are the ingredients.

  • collards
  • water
  • onions
  • garlic
  • sugar
  • dried turkey stock
  • roasted turkey juices/fat
  • yeast extract
  • salt
  • black pepper
  • liquid smoke

They tasted homemade because they basically use the same ingredients as I and contain no hard-to-pronounce artificial flavors or seasoning.  The box states there are approximately 2 1/2 servings per package which was accurate, they are also low in fat and 50 calories per serving.

Mama Mae’s products are manufactured locally in Englewood Cliffs, NJ and if you like greens, I highly recommend trying them.  I look forward to trying some of the other Mama Mae’s items.

OOTD – Morning Coffee

Hello Friends and Happy Friday Eve!

Before I begin, I want to say that I am thankful for my Bloggy friends, for their kind words and understanding of yesterday’s post it was truly a blessing – THANK YOU!  Life is so precious and fleeting that we should all stay focused on the positive, spreading kindness and love as we are more alike than most would care to admit.

Now today is a brand new day and mine started with a Green Smoothie made with spinach, almond rice milk and a banana but I must also have 20 ounces of coffee for the road. I am not a coffee snob nor a Starbucks drinker and have purchased coffee at WAWA, 7-11 and Dunkin Donuts, but the best is my homemade, flavored Java, this morning it was Melitta Hazelnut.

Go Red for Women Campaign

The American Heart Association will be celebrating National Wear Red Day For Women  on Friday, 2/1/13

Merck and Macy’s are national sponsors, and on Feb 1st through the 5th, Macy’s will be offering an additional 20% off select items if you are wearing red in store or online using the code “RED”.

I will be participating in the effort to drive awareness of this deadly disease by taking part in a “Pin Red For Women Campaign” and am asking you, my fabulous followers to join me.  The only requirement is for you to follow me on Pinterest, (DeDivahDeals) and during the month of February pin pictures of yourself wearing red.  Throughout the month I will check your boards and repin the pictures onto mine and by the end of the campaign we will all be joined together for a common cause in a sea of Red.

OOTD – Black and Burgundy

Hello Friends and Happy Friday Eve

Are you ready for some snow? If so, “tonight is the night…is the night…is the night” at least it’s supposed to be in southern Delaware. Fortunately, they are forecasting less than an inch so the commute home may not be too bad.

If you follow me on Instagram (ablake48), you’d know that I start my mornings with a healthy, green, breakfast smoothie.  Today’s smoothie was made with spinach, carrots, banana, almond milk and Chia Seeds.

Crock Pot Soup

In our house cold weather signals the time for a hardy and healthy winter soup!  My grandmother (RIP Mama), used to make the best homemade vegetable soups, I can still taste the seasoned carrots, tomatoes, onions, celery and of course the soup bone with marrow.  I was looking for new recipes and came across one that included kale which is my favorite vegetable.

kale, soup beans, canned tomatoes, garlic, frozen veggies and soup stock.

I was going to use the smoked turkey necks but there wasn’t enough room in the pot.  I had to use a larger crock pot because the bag of beans which had soaked overnight really expanded and I didn’t want to discard any of them.  After spraying the crock pot with cooking spray I poured in the frozen veggies, beans, tomatoes, a spoonful of garlic and then topped with handfuls of kale.  One packet of the homestyle stock was dissolved in warm water enough to cover the beans.

Cooked on low for 8-10 hours.

I came home to a house smelling GOOD and a fully prepared dinner!  This soup was healthy, delicious and very filling, hubby topped his with a little Goat Cheese and I added a piece of brown bread (carbs are my down fall) and hot sauce!
