Good for the Soul Soulfood Sunday – Slow Cooked Asparagus Soup

Hello friends and welcome to Good for the Soul Soulfood Sunday, a kickoff to the celebration of National Wear Red Day on Friday, February 6th.

Did you know that 1 in 3 women die of heart disease and stroke each year?  This is an unacceptable statistic that should concern us all because it’s preventable with the proper diet and exercise.  This week, fellow blogger Robin @ RobinCharmagne  and I have teamed up to bring awareness to heart disease and women beginning today with a heart healthy recipe.

Slow Cooked Asparagus Soup

 

My heart healthy Soulfood Recipe is a Slow Cooked Lite Creamy Asparagus Soup using low sodium chicken broth and coconut milk.

 

Ingredients:

2 lbs of fresh Asparagus, washed and cut (trim and discard ends)

1 can Coconut Milk

5 cups reduced sodium Chicken Broth

1 Medium white onion diced

Fresh Ground Pepper

 

Ingredients for Asparagus Soup

Thorough wash Asparagus, cut ends and discard Cut ends and discard

Wash Asparagus thoroughly, trim ends and discard, cut remaining stalks in half

Pour 5 cups of reduced sodium chicken broth and coconut milk into Crock Pot

Add asparagus, onion and fresh ground pepper and stir

Cover and cook on low for 6 hours

Soup on a cold winter day is good for the soul and lowering your sodium intake is good for the heart.  Lowering your sodium intake helps to prevent increased risks for stroke, heart failure, osteoporosis, stomach cancer and kidney disease.
