Lemon Chicken

Last week I wanted to try something a little different because chicken is on the menu every week in our home.  Using prepackaged chicken breasts and the following ingredients we had a tasty meal that was perfect for a cool Autumn weekend.

Ingredients

  • 6 boneless skinless chicken breasts

  • 3 tablespoons butter

  • ⅓ cup chicken broth

  • 4 tablespoons fresh lemon juice

  • 1 tablespoon honey

  • 2 teaspoons minced garlic

  • 1 package Greek Dressing & Recipe Mix

  • 1/2 container fresh mushrooms

  • optional: fresh rosemary and lemon slices for garnish

     

Instructions

 

  1. Preheat oven to 400 degrees and grease a baking sheet or large casserole dish.

  2. Melt butter in a large skillet over medium-high heat. Add chicken and cook chicken 2-3 minutes on each side just until browned. Transfer chicken to prepared baking sheet or casserole dish. brown chicken breasts in butter

  3. In a bowl mix together chicken broth, lemon juice, honey, garlic and Greek seasoning package lemon chicken recipe

  4. Pour sauce over chicken, add lemon rinds (optional) and mushrooms. Bake 20-30 minutes (closer to 20 for smaller chicken breasts, closer to 30 for larger) until chicken is cooked through. Every 5-10 minutes spoon the sauce from the pan over the chicken. chicken recipes

  5. Garnish with fresh rosemary and lemon slices if desired and serve.

Slow Cooked Turkey Cacciatore

I love my Crock Pot and use it not only to save time in the colder months but also in the summer, especially on Sundays.  I can prepare a meal before I leave for church and by the time I get home there’s nothing to do but relax until dinner is done.

 

Thanks to Jennie-O I was able to create a Slow Cooked Turkey Cacciatore that the entire family enjoyed.

Turkey Caccitore AVI

Ingredients:

1 – Jennie-O Turkey Tenderloin – sliced

6 – Sweet Peppers – sliced

1 – Medium Onion – sliced

2 – cans diced tomatoes

2 – tsps of minced garlic

 

Parsley or Italian Seasoning (optional)

Angel Hair Pasta or Rice

 

Instructions:

 

Wipe inside of Crock Pot with Olive Oil, use a paper towel

Slice Turkey Tenderloin into 8 equal slices

Add peppers, onions, diced tomatoes, garlic and seasonings

Cover and cook on low for 6 hours or high for 4 hours

Serve over Angel Hair Pasta or Rice
