Skillet Pie

Hello friends, I hope all is well in your world.

For the past several weeks, Route 495 in Wilmington has been shutdown and this has added an additional 30 minutes to my daily commute.  Now that I am getting home later, I’m trying to come up with fast and easy dinner recipes.

I found one online for a Chicken Tamale Skillet Pie, but changed it up a bit to use what I already had in the kitchen.

What I Used:

1 package of Ground Turkey

1 can of cream style corn

1 can Ro*Tel Diced Tomatoes

1 Can of Crescent Rolls

Sweet Peppers

1/2 tsp ground cumin

Shredded Cheese

1 Skillet Pie

Pre-heat the oven to 350 degrees.  In a cast-iron skillet brown the ground turkey on medium high heat for 10 minutes or until brown.  Add a can of Cream Style Corn, a can of Ro*Tel tomatoes and ground cumin.

Cook for 3 minutes or until thoroughly heated, remove from heat, add a few sweet peppers then top with cheese.

Cover with crescent rolls and put into oven to bake for approximately 20 minutes or until dough is golden brown.

Remove from oven and let sit for 5 minutes before serving.

This was a great meal and my men loved it, the next time I am going to use shredded chicken.

Geneva’s Gratitude | Thankful Thursday

Hello Friends and Happy Thankful Thursday!

 

On a Thankful Thursday two weeks ago I was invited to attend a Gratitude Celebration hosted by the fabulous photographer Geneva Fonda. The Evite came as a surprise as I had only met her once and for a short period of time when I covered the Women in Business Luncheon back in December.  She was one of the honorees so I asked to take her picture, we exchanged business cards and that was the last time I saw her.  The Evite sat in my inbox and there were several times that I was going to delete it, but changed my mind and RSVP’d, and I am glad that I did.

The Evite clearly stated that we weren’t expected to make a purchase but simply to come and enjoy ourselves in celebration of the 3 years of blessings for Geneva Fonda Photography.  I made my way into Wilmington after work and arrived at the Film Brothers Movie Co-Op where the event was being held.  

There were already several people in attendance, and the atmosphere was light and cheerful.  I was immediately greeted by Geneva and introduced to several other attendees.  There was a delicious hot and cold buffet provided by Sherms Catering, a beverage bar and smooth sounds being played courtesy of Geneva’s husband.

Geneva is truly a beautiful woman both inside and out whom I am thankful to have met!

Westown Movies Pre-Grand Opening & Charity Night

Thursday evening I along with many other Facebook sweepstakes winners had an opportunity to attend the Pre-Grand Opening and Charity Night held at Westown Movies. The excitement for this event began when it was first announced that a movie theatre was going to be built in Middletown.  Most residents in the M.O.T. (Middletown/Odessa/Townsend) area were happy and anxiously waited for what seemed like a long time for this much needed family entertainment venue. Westown Movies Westown Movies Opening 035 Westown Movies did not miss a beat in incorporating the local flair in it’s designs and features of the 44,500 square foot theatre. Upon entering the lobby you are greeted by a 1,100-square foot mural showcasing Middletown’s familiar landmarks Cochoran Square, the Everett Theatre and scenes from the Old Tyme Peach Festival. Westown Movies Opening 074 Thursday night’s event also showcased and benefited local organizations with donations to the Middletown’s Big Ball Marathon; the Appoquinimink Foundation and the Ronald McDonald House in Wilmington. Fast Food Workers Protest for Higher Wages

Have it your way..NOT today…at least not at Burger King on Concord Pike in Wilmington.  Fast Food employees at this location joined in with dozens of other workers in U.S. cities to protest their low pay and benefits.

Most workers agreed that the profits these corporations earn should be used to pay higher salaries and benefits which would be better for the economy.  The minimum wage of $7.25 an hour or $15,000 a year for full time employees is not enough to support a family.  Jobs which were once held by High School students are now being filled by men and women with families who are living paycheck to paycheck.

Burger King Worldwide stated that they do not make pay decisions for their independent franchises, but feels as though an increase in salaries would mean higher priced menu items.

Federal Labor Law gives all workers the right to engage in “protected concerted activities” to complain about wages, working conditions or other terms of employment.  Therefore, those involved in today’s protests are protected and can return to work without repercussions.  The local Police was also on hand to ensure walk-in and drive-thru customers were not affected.

Nikon CoolPix P520 Camera

Hello Friends and Happy Tuesday

Inspired by some awesome photos I’ve seen taken by you guys I decided to upgrade my camera from a Canon PowerShot SX150 to a Nikon CoolPix. Not that a camera will make me a better photographer, it will however, (I hope) make my photos pop with less of a need to rely on editing software.

My husband recommended that I go to Cameras etc and take a look at their selection of used cameras of which was extensive, but I was more interested in the Nikon Coolpix P100 on sale that I had seen in the newspaper.

Armed with the advertisement I drove into Newark, to Main Street on the campus of the University of Delaware and fed 4 quarters into the parking meter.  Entering the store I was immediately greeted by Imaging Consultant Todd.  I explained what I wanted, showed him the ad and stated that I had “Liked” them on Facebook hoping for a discount.

Unfortunately, they didn’t have the advertised model in stock but Todd did show me a higher priced model the P520, but before you scream, “bait and switch”, he didn’t try to push me into purchasing it.  He called their Wilmington store and asked to have one shipped for  arrival the next day.

Todd explained all the features on the P520 and how it compared to the P100 so that I would be familiar and comfortable before making the purchase.  He also took time to show me some used Nikon cameras in the same price range but after I took the camera outside, snapped a few pictures I decided then to buy it.

The time and patience that Todd spent in explaining all the features was awesome, I even had to feed two additional quarters into the meter, I see why they have been a successful business since 1977.

This camera is an early birthday present to myself and I am looking forward to using it this weekend as we celebrate our 23rd Wedding Anniversary and at the BLMGirls event in DC on the 31st.

Chasing The Dream Entrepreneurship Camp

Hello Friends and Happy Monday!

Chasing the Dream Entrepreneurship Camp sponsored by The Money School of Delaware provided youngsters between the ages of 9-13, an opportunity to learn the basics of starting a business.  Last Thursday they were given the tools and a venue to showcase what they had learned.

A miniature Marketplace was set up in Rodney Square in Wilmington where the campers had an opportunity to sell their products, which included body scrubs, hand crafted jewelry, sunglasses, candy, plants, lemonade, popcorn, metal sculptures even hourly math tutoring sessions.

These young entrepreneurs obviously also learned another very important lesson, the value of customer satisfaction.  They greeted each passerby with a smile and eagerly answered questions about their products.

There was a heavy downpour on and off during the day but that did not stop people from coming out to support.  There was a steady stream of customers as well as WDEL Radio personality, Amy Cherry and a 6ABC News cameraman.

I was truly impressed with not only the products these entrepreneurs had created, but how each of their personalities and positive attitudes showed brightly despite the dark clouds looming overhead.

New Addition to the Family

Hello Friends, we have a new addition to the family!

On Wednesday, we welcomed a new little bundle to the family, it’s name is Spark, Chevy Spark. When Tayair pulled up the driveway I almost cried, it was the cutest little car I’ve ever seen. Not quite as small as a “Smart Car” but just as cute and compact as the Volkswagen Beetle was back in the ’30’s.

The 2002 Hyundai Elantra that Malik was driving began acting up, even after a replaced engine, the brakes and rods began to go and it just nickeled and dimed us so it was time to get rid of it, we will donate it to Goodwill.  We decided to hand down the 2005 Honda that was purchased in April and then get Tayair a new vehicle.  My husband had visited Diver Chevrolet last week and thought the Spark would be the perfect car for him, one that would get him from Point A to Point B and would last for many, many, many years!

Not having purchased a new vehicle since 2005, it was amazing to see all the bells and whistles in this basic car. I thought my friend’s Mercedes was loaded with amazing features but this little Spark was also equipped with some awesome controls, including Sirius XM Radio, Bluetooth, 9 airbags, USB outlet, touchscreen infotainment system, steering wheel mounted audio controls, and an emergency communication system (OnStar 6-month free trial).

I didn’t realize it was a 4-door, and squealed with delight when he opened the back doors, so cute and surprisingly comfortable with ample leg and head room.

The trunk was a bit too small for me and there isn’t a spare tire, instead an air compressor and a can of “fix it flat”, but with OnStar just a push of a button will get you emergency service.

This vehicle will be in the family for a long time to come and I can honestly say that it’s a welcomed addition even with the car payments!
