Disclosure: I was provided the Veetee Dine In Rice in order to facilitate this review, however, all opinions are 100% my own.
Hello friends, aren’t you just loving this gorgeous weather? I definitely am, but more importantly, I am enjoying the longer daylight hours which gives me a chance to spend some time outdoors after work. Mid-week dinners are now quick and easy especially since I have discovered the many varieties of Veetee Dine In rice.
It’s great that both Hubby and Tayair love rice because making this Jambalaya in under an hour using two types of Veetee Rice made for a yummy mid-week meal.
Ingredients:
Veetee Rice – Red Beans & Rice New Orleans Style and Golden Vegetable Rice
1 Package fully cooked Smoked Sausage – diced
1 can diced tomatoes (any flavor)
12 oz bag fully cooked frozen shrimp, deveined, tails removed
16 oz bag frozen peppers and onions
1 Bay Leaf
Cajun Seasoning
Olive Oil
Options: Cayenne Pepper, Hot Sauce
Directions:
Brown the sausage in a heated pan sprinkled with 2 tablespoons of Olive Oil.
Add frozen veggies, stir, then allow to simmer for 3-5 minutes until peppers and onions are thawed.
Add diced tomatoes, Bay leaf and a few sprinkles of Cajun Seasonings, stir again until everything is thoroughly mixed. Cover and allow to cook on low heat for an additional 5 minutes.
Remove Bay Leaf, add both packages of rice, stir again, cover and cook for 20 minutes, check to ensure rice is not sticking to pan. If you need more liquid add 1/2 cup of low sodium chicken broth.
Remove lid then add Shrimp, re-cover and cook for 10 minutes or until shrimp is completely done.

Makes me want to visit New Orleans again. Looks yummy
I have always wanted to visit NOLA…another #bucketlist item.
NOLA is a hoot! And I will not incriminate myself by saying what went on during Mardis Gras 😉
I am so excited for this giveaway! I am a rice addict and I have never heard of this company before. I will definitely be looking for them in the grocery store. My favorite rice recipe is a chicken and rice dish that I just made up with rice, chic, carrots and broccoli and some seasoning and rice. I’m not a very good cook so I usually buy rice that is seasoned. I actually eat some type of rice every single day! I hope I win I would love to try these out!
Rena, if you like rice you’ll love this brand. I bring a pack to work for lunch and it’s tasty and filling. Everyone in our house loves it and the variety is amazing. Good luck with your entry.
Definitely entering the giveaway! And I’m going to have to try this. I have been putting Jambalaya on the list of weeknight recipes but I always end up not doing it because of it being labor intensive and too much time. Not with your recipe! 🙂 Thanks!
Good for you, and I know you will love it – good luck!
Anything with Rice & chicken I love… it would be hard to pick a fav!
I know what you mean!
I’ve never tried this but yours looks amazing. Does it have to have sausage? Maybe if I can find Turkey sausage I would give it a try thanks mama for share 🙂
Mari, I only use Turkey Sausage because we don’t eat pork. Try it, I am sure you’d like it.
This looks delicious!!! I love a rice and veggie stir-fry and a shrimp and sausage dish like this is something I definitely want to give a go!
Try it…you’ll like it!
That looks delicious!

Thank you, it was. Enjoy the weekend.
That rice looks super easy to use! I like to make Jambalaya (from a box mix) but I do’t add any seafood.
No shrimp? Stacie, this is a great rice to add to a mix or to eat solo. Hope you are having a wonderful weekend.
Omg this looks absolutely delicious! Seriously, can I come to your house for dinner? You always make the most delicious looking food. This Veetee Rice looks great, I could really use it in my house. Especially because Miss B and I love our rice, this would make dinner prep a lot easier. I love Jambalaya, so thank you for the amazing recipe. I will definitely be giving it a try soon.
Hope you had a phenomenal weekend, sweetie. God bless the rest of your week.
OMG Do you know how much fun we would have if you and Miss B came for a visit!!!??? Good luck with you entry and I hope you have a blessed week as well.
My favorite rice recipe is brocolli and rice casserole. I love to make it around the holidays.
