Crocktober – BBQ Beef Ribs

Hello Friends and Happy Fri-Yay!

What a perfect way to kick off the month dedicated to all things food!!!

Friday’s Foodie Feature is Slow Cooked BBQ Beef Ribs – this is one recipe that had my mouth watering and my mind on the Crock Pot all day long.  Since we don’t eat a lot of red meat it was definitely a treat for the entire family!

Crocktober

 

Ingredients:

  • Beef Ribs
  • McCormick Grill Mates
  • Bottle BBQ Sauce
  • 1 Medium or Large Onion
  • Cooking Spray
  • Water

BBQ Ribs

Place ribs inside a large plastic bag, add Grill Mates Seasoning then rub to coat each rib.

I usually get a few extra produce or meat bags from the grocery store which comes in handy for marinating or dry rubbing meat so that I don’t have to touch it.

Rub dry seasoning to coat each rib

Lay ribs flat in the bag, then using another bag cover to seal and place in the refrigerator overnight.

Remove ribs from the bag and dice onion

Spray Crock Pot with Cooking Spray then layer the ribs, diced onion and a little BBQ Sauce

Continue layering ribs, onion and sauce

I had some leftover pineapple chunks so I tossed them in over the last layer of ribs. Added a little water to the empty BBQ Sauce bottle, shaken and poured over fruit – “waste not want not”

Cover and cook on LOW for 8 hours

Oh how I wish this was “smell-o-vision” because when I walked through the door…oh la la the aroma was overwhelmingly delicious and I know you would have loved it!

 These finger-licking-good ribs were served with mashed potatoes and string beans to complete our family meal.

Crocktober – Cajun Chicken & Shrimp

Today’s Crocktober Foodie Feature is Cajun Chicken (of course) AND Shrimp

 Ingredients:

  • 1 pound skinless chicken thighs
  • 1 large onion
  • 1 can stewed tomatoes – undrained and chopped
  • 1 garlic clove minced
  • 1 tablespoon sugar
  • 1 teaspoon paprika
  • 1 teaspoon Cajun Seasoning
  • 1 teaspoon black pepper
  • 1 pound shelled shrimp, deveined and cleaned
  • 1 tablespoon lemon juice
  • Hot Sauce to taste
  • 1 cup of prepared rice
  • * diced red pepper and celery rib can also be included

Spray Crock Pot with cooking oil

Place chicken thighs in Crock Pot, top with onion, garlic, tomatoes with juice, paprika, pepper, sugar, and Cajun seasoning

Cover and cook on LOW for 8 hours or HIGH for 4 hours – depending on Slow Cooker

In the last hour of cooking add the shrimp, lemon juice and hot sauce.

Crocktober – Chicken and Sweet Potato Stew

Today’s Friday Foodie Feature is a recipe from

Rival Crock Pot Slow Cooker Cookbook

Ingredients:

  • 3-4 Chicken Breasts 
  • 1 can of stewed Tomatoes
  • 1 cup chicken broth
  • 1 cup of carrots
  • 2 medium sweet potatoes
  • 4 small yellow potatoes
  • 1/8 tsp nutmeg
  • 1/8 tsp ground cinnamon
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp celery seeds
  • fresh basil leaves

Dice chicken into bite size pieces, wash, peel and cube potatoes

Measure out  dry spices and spray Crock Pot with cooking spray or use liner

Place chicken into Crock Pot

Cover chicken with diced potatoes

Add stewed tomatoes, carrots and chicken broth

Add dry seasonings, STIR, cover and cook on low for 6-8 hours

It  was a crazy Monday morning and I forgot to stir all the ingredients so it didn’t look like the picture and it cooked for 10 hours instead of 8.  However, this Indian influenced recipe was a good and satisfying meal.

Friday Foodie Feature – Betty Crocker Chicken Helper

Hello Friends and Happy Fri-Yay!

You’ve heard me say this before, “we eat so much chicken that I’m afraid one day we’ll wake up with feathers!”  No seriously, I cook chicken or turkey at least 3 times a week and it’s not that we tire of it, it’s just I have to find new ways to make it differently.  There are times when I am too tired to cook from scratch so I’m always looking for products that makes meal planning easier.

Betty Crocker, the maker of Hamburger and Tuna Helpers recently introduced Chicken Helpers and we loved it.  After dicing up skinless *Chicken Breasts, I followed the directions on the box to make the Sweet and Sour Chicken.  While the chicken cooked I boiled a pot of Jasmine Rice, dinner was done in less than an hour, tasted better than Chinese Takeout and there were no leftovers! Grocery store sales coupled with coupons from the Sunday paper and the Betty Crocker website is incentive enough for me to keep a few boxes of Chicken Helper in the pantry!

Friday Foodie Feature – Stuffed Chicken Breasts

The days are getting shorter and school started this week so I am lining up my recipes for the Fall.  Chicken is a staple in our house and this was an easy breezy “4 ingredient-less than 40 minute” recipe.

Ingredients:

Chicken Breasts ~ Mozzarella Cheese ~ Minced Garlic ~ Fresh Spinach

Rinsed chicken breast and placed on Wax Paper

Covered with another sheet of Wax Paper and flattened with kitchen mallet

Spread minced garlic and sprinkled with a little black pepper

Layered with Spinach leaves and covered with Mozzarella Cheese

Rolled Chicken Breasts and secured with wooden toothpicks

Sprayed dish and tops of Chicken Breasts with Olive Oil Cooking Spray.  Placed in preheated 350~ oven for 30 minutes and was no longer pink.

Friday Foodie Feature – Campbell's Slow Cooker Sauce

Hello Friends and Happy Fri-Yay!

Wow, what a whirlwind week…why is it that in the winter months time drags and moves slowly but when it’s summer it speeds by like a freight train on steroids?

In 2 days we’ll be celebrating 23 years of marriage, and yes, that too seems like it flew by.  There were times when we experienced “winter months” and time lagged, but with the grace of God, we are now in our “summer” months – like a freight train on steroids – lol!

If you are like me, you are still grilling outdoors and this may be an early start for an indoor Crockpot meal, but I wanted to try the Campbell’sSlow Cooker Sauce.

Ingredients:

  • Campbell’s Slow Cooker Sauce – Sweet Korean BBQ w Roasted Ginger & Sesame
  • Jasmine Rice – Dellarice.com
  • Beef – 2-3 lbs
  • Slow Cooker/Crock Pot

There are 3 other Campbell’s Slow Cooker Sauces that I’ll try, and this Korean BBQ was just the right blend.  It wasn’t too salty which would have been a turn off for me.

Friday Foodie Feature – Turkey Tacos

Hello Friends and Happy FRI-YAY!

This week’s Foodie Feature has a few more than 4 ingredients but took less than 40 minutes to prepare.  It was an easy breezy mid-week meal that my men really enjoyed and got me out of the kitchen in record time!

Try it and let me know if you added a twist to make it better.

Ingredients

  • Ground Turkey
  • Ortega Fiesta Flats, Taco Seasoning, Taco Sauce
  • 1 cup Water
  • Diced Onion
  • Diced Tomato
  • Shredded Cheese
  • Shredded Lettuce
  • Sour Cream

Brown ground turkey, drain liquid then and add 1 cup of water and the Ortega Taco Seasoning Mix.  Heat until thickened, stirring often.

While ground turkey is cooking, dice tomatoes and onions

Warm Ortega Fiesta Flats in a preheated oven 350~, for 3-4 minutes

Friday Foodie Feature – Summer Snacks

Hello Friends and Happy Fri-Yay!

My sons are continuing their quest to “eat me out of house and home” and the foods that I featured in the Summer Snacks post are not filling enough!  During a recent shopping trip to Shoprite I came across two items that may keep them satisfied until dinner!

Philly’s Best Steak Co., Inc. Halal Lamb Sandwich Slices

They can make cheesesteaks, Gyro’s, Stir Fry or I can use them to make Moroccan Lamb Couscous.  These steak sandwiches are also available in Halal Beef and Chicken.

Perdue Sweet Italian Chicken Sausages

They can boil, pan fry or throw these sausages on the grill to make a hoagie, a wrap or simply eat them with eggs and grits for breakfast.

Add a salad with black olives, goat cheese, mixed greens and cucumbers and they should be alright until dinner!

Simply Spuds Steamables – Sweet Potatoes

This was my second purchase of Simply Spuds Steamables, the first were of the Golden Potatoes and the men really liked them.  These Sweet Potatoes are tripled washed, nicely sized and are steamed in the microwave, ready in 8 minutes.  They are great for a quick mid-week meal and when you don’t want to turn on the oven.
