Hello friends,
the summer may be fading fast, but don’t put away the grill just yet, why not fire it up and make some chicken kabobs for dinner tonight? Kabobs are a quick and easy way to cook both your meat and veggies together on a stick whether it’s with chicken, beef or seafood.
If using wooden skewers, allow them to soak in water for about 15 mins, this will prevent them from scorching or burning too badly.
I like using cherry tomatoes, mushrooms, onions and sweet peppers.
Cube boneless, skinless chicken, then sprinkle on a little pepper and any seasoning of your choice.
Thread chicken cubes and veggies onto the skewer.
Before placing the kabobs onto a high, preheated grill, spray them with a little cooking spray or brush with olive oil. Grill for approximately 10 minutes or until done, you can also brush on a little barbecue or hot sauce if you prefer.
You know me, I have to have a little something sweet, so for dessert I made Krusteaz Lemon Bars but with a twist, crushed Lemonhead Candy sprinkled on top.
Following the directions on the box, I baked the Lemon Bars then allowed them to cool before adding some crushed candy.

Hello friends and Happy Fri-Yay!
Here we are again, at the end of another blessed week and knocking on the door to what should be a gorgeous weekend. Hubby and I have a wedding to attend tomorrow and on Sunday we will be taking our son out to dinner to celebrate his 22nd Birthday. His birthday was actually on Monday but if you read yesterday’s post you’d know that I was in Atlantic City so we didn’t get to celebrate. He is also scheduled to have maxillofacial surgery on Monday morning, so please pray for a successful procedure.
Take a look at these guys, I saw them on the Boardwalk in AC and thought about how much this means to me in my daily life.

Today’s Friday Foodie Feature is dedicated to

In the late 80’s, my hubby who at the time was my fiance and I went to Fort Lee, NJ, to visit her at her mother’s house. She had just flown in from Cali with her first born son, RJ and for lunch she made a Taco Salad. Neither one of us had ever had it and it was also the first time I had ever eaten an avocado. I fell in love with the recipe and over the years, have made it during the warmer months. Last week when I chose to make it for this week’s feature I didn’t realize that it would be on her Birthday! Further proof that we were meant to be friends for life!
This is such an easy-to-prepare salad and my men simply loves it, Malik was having a fit because he had to wait until I took the pictures!
Ingredients:

1 lb Ground Turkey – fully cooked
-
1 package Taco Seasoning
-
1 Can of Black Beans
-
Iceberg Lettuce – shredded
-
1/2 Avocado – diced
-
1 Package of Cherry Tomatoes – halved
-
1 Cup of Mexican Blend Shredded Cheese
-
Catalina Dressing
-
Tortilla Chips
-
OPTIONS: Cilantro, Black Pepper, Hot Sauce, Sour Cream
Thoroughly cook the Ground Turkey then add Taco Seasoning and 1/3 cup of water – preparing according to package directions.
Wash veggies, cut tomatoes in half, shred the lettuce and dice the avocado. Drain and rinse can of black beans.
Put lettuce, tomatoes, avocado, and black beans into a bowl and top with taco seasoned ground turkey.
Pour in just enough Catalina dressing to lightly coat then mix.
Serve with Tortilla Chips and top with options, sour cream and Hot Sauce.

Hello Friends and Happy Thankful Thursday!
Last week was an emotional roller coaster filled with both highs and lows. Monday, I taught a Blogging 201 class:Monetizing Your Blog, and it was a full house despite the torrential downpour of rain.
Everyone was enthusiastic, asked questions and participated in lively discussions, it was one of the best classes to date. Thank you again Money School of Delaware for giving me this opportunity not only to share knowledge but to sharpen my skills and expand my base.
Teaching again is helping to lay the foundation for my 5-year plan leading up to retirement/encore entrepreneurship.
My outfit of the day was a black pencil skirt with floral embroidery thrifted from Goodwill, a sleeveless mock neck tank also thrifted from and faux snakeskin pumps via Target.
On Thursday, I wore another black pencil skirt but this one was from JCPenney and the striped top is from Old Navy.
I broke up the classic black and white combination with a pop of red in the Caliente pumps from The Shoe Dept and a red plastic bracelet from Rugged Wearhouse.

Thursday was also my sister’s birthday, had she lived, she would have been 51 – Not A Day Goes By….
Although, I am thankful that I had her 29 years, I still feel that she is gone too soon – Rest in Peace Lil Sis!

Hello Friends and Happy Thankful Thursday!
2014 is the year that I will be celebrating my 53rd birthday, and for that I am thankful. I am also thankful for my family, my friends, my faith and my health. Thankful that I don’t have any major medical issues but I do have a few concerns which I will address this year.
My number one concern is the lack of drinking water…not the lack of having fresh tap or bottled water like in some countries, but the lack of me actually drinking it.
I am smart enough to know that my body needs water, but am not smart enough to drink more than just one 16.9 oz bottle a day!
I’m dehydrated and have begun to get the sharp pains, it’s like my kidneys are kicking me in the back and saying, “hey stupid, put down that wine and drink more water!”
According to the For Dummies website, “You must have water in your diet. It is brimming with minerals and electrolytes, and you can’t live without it. Water is a solvent. It dissolves other substances and carries nutrients and other material (such as blood cells) around the body, making it possible for every organ to do its job.”
The #1 reason I don’t drink more water is because I’ve always had an overactive bladder which doesn’t bode well with a long commute, I would however, make a good spokesperson for Depends. In order to prevent me from having to stop at a restroom on the way home, I’ll only drink 1 bottle with lunch.
Once home I conveniently forget to drink more and instead will have a few glasses of Red Wine which may be good for the heart but it makes my kidneys quite jealous.
This year I have made the wise decision to drink more water and to make sure I won’t forget, I’ll put it in a wine glass and add a few lemon slices. This should be a good motivator, what do you think?

Hello Friends and Happy Hump Day Wednesday!
I was recently featured on the website “Fabulous After 40”, and chosen as “Glam Gal of the Week”, (click the link to read in case you missed it.)
I was also selected along with two other ladies who we weren’t afraid to wear the color red after the age of 40. The red sheath dress that I was wearing was received from eShakti as a product review. Sheath dresses are my favorite styles and even with the the change in weather they will remain forefront in my closet.
In today’s outfit I am wearing a color blocked sleeveless sheath dress from Avon. I gave the outfit an edgier look with the pleather jacket thrifted from GW Boutique (Goodwill), studded booties and stud and spike accessories.
Remember when I purchased this Spike Necklace/Earring Set on my birthday at Rugged Wearhouse for a $1.00 on clearance?

Last Friday I also wore a color block sleeveless sheath dress purchased from Ross with a pair of suede over-the-knee boots and long knit sweater.

I believe these rhinestone embellished boots were also purchased a few seasons ago from Ross.
As you can see, I have no intentions of putting away my sleeveless sheath dresses anytime soon.

Remember last month when I started my birthday at the Glasgow Medical Center taking tests, well the results are in and although not all of them were abnormal, one was a bit disconcerting. I am Vitamin D deficient.
Me…the dunking of Oreos into a big glass of milk…me….the Kahlua mixed with milk drinking…me….the daily eating of cottage cheese in salads…me…the tomato and cheese sandwich eater…me…the yogurt spooning, sun worshiping me is Vitamin D deficient – REALLY, how does that happen?
AGE
Vitamin D deficiency is more common in women, people of color, obese people, senior citizens and breast-fed infants. For 52 years I have been in good health, other than the normal bumps and bruises and a few minor cuts as a child I have been the picture of health. Only two hospitalizations, the first was 21 years ago when I had to have a Cesarean Section giving birth to #1 son, and the second was four years ago for Urethral Diverticula,
So how does one go from that to this…simple
AGE
Now don’t get me wrong, I know there are millions of people with ailments, diseases and disabilities far worse than being Vitamin D deficient, so I’m not crying, “woe is me”. I’m just passing along a little information that I’ve learned since my diagnosis, because more than half of the US population could also be Vitamin D deficient.
Vitamin D is really a hormone rather than an actual vitamin and it is needed for calcium absorption required for bone growth and density. 90% of our Vitamin D comes from directly from the sun, but darker complexions do not absorb as much due to the melanin in our skin.
Body fat interferes with how Vitamin D is formed as well as age, after 50 we are less able to produce Vitamin D. Vitamin D stimulates muscle growth which is important especially for older women who are more susceptible to bone softening osteoporosis. Low Vitamin D levels have also been associated with the increased risk of death from cardiovascular disease, cognitive impairment and cancer.
Symptoms may be subtle but they include:
- Fatigue
- Joint pain
- leg cramps
- muscle pain or weakness/cramping
- sleep interruption or insomnia
- poor concentration or memory
- headaches
- bladder or bowel issues (urgency/frequency or constipation/diarrhea)
The best way to determine if you have a Vitamin D deficiency or to determine the best dosage you need for your body, your blood levels must be tested. Levels may be lower in the winter and higher in the summer, but this chart shows the categories of those levels.
There are several online sites including www.webmd.com where you can get additional information but for me, the bottom line is that I need to increase my Vitamin D intake, including taking a supplement of at least 2000 mg; eat more foods fortified with Vitamin D such as milk, butter, yogurt, orange juice, and oily fish and of course hang out in the sun more and you know me…I love hanging poolside…so a trip to The Bahamas may be just what the doctor orders!

I was going to post some old baby pictures of myself, but unlike me, my mother didn’t take many nor did I have any.
Yesterday a co-worker surprised me with a card, candy and this balloon so here I am pre-celebration
BTW – I didn’t make the 152 by 52 weight loss challenge…but I’m not giving up!
