Brownies in a Bowl | FAIL

Hello friends, I hope all is well in your world.

Today’s Friday Foodie Feature comes with a warning!

Duncan Hines Brownies in a Bowl I decided to make Duncan Hines milk chocolate brownies in a bowl instead of a pan.  I followed the directions on the box, however, since I baked them in Pyrex bowls they should not have been filled to the top!

Spray the bowls with non stick cooking spray, pour in the batter but DO NOT OVERFILL, otherwise the insides will not be done in the amount of time stated on the box.

DO NOT OVERFILL I eventually scooped the partially baked brownies out of the bowls and put them into a baking dish to finish cooking.

It was Malik who asked if there were supposed to be gooey on the inside.  So before realizing they were not completely done, I had topped each with a few scoops of Duncan Hines cherry topping and a few whooshes of Reddi Wip Cream.

This delicious dessert looked wonderful and after completely baking tasted just as good!

Slow Cooker Saturday

Hello Friends and Welcome to Slow Cooker Saturday!

Do you find yourself rushing through the work week in order to get to the weekends?  If so, do you realize that you are just rushing your life away?  I know because I’m guilty of doing it,  so from now on, other than Mondays I’m going to slow down and enjoy all of the week days.

Do you live for the weekends?

I’m up early and out for the first dress rehearsal for Goodwill’s 2014 Runway Show.  The models will get a chance to see and try on what we, the stylists has chosen for them to wear.   I met with my models previously and they had an opportunity to try on their outfits in Goodwill fitting rooms.  Today with some added accessories we will all get a chance to see what they will be wearing  on the runway and I am anxious.

Slow Cook Saturday

 

Ingredients:

  • 4 Frozen Chicken Thighs or Breasts
  • 1 Large Can or 2 Small Cans of Cream of Mushroom Soup
  • *1 Package Frozen Broccoli
  • 2 cups of Rice

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Spray Crock Pot with Cooking Spray or use Slow Cook Liners for easy cleanup. Add chicken thighs/breast and top with frozen broccoli.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Pour in can(s) of soup and sprinkle with black pepper (optional)

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Pour in additional can of water

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Cover and cook on low 8 hours or high for 4 hours depending on Crock Pot model

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Add two cups of rice, stir and leave on low for an additional 10 mins

add 2 cups of rice

Boneless Beef Ribs & Bean Soup

Hello Friends and Happy Fri-Yay after Christmas!!!

Today’s Friday Foodie Feature is

Slow Cooked Boneless Beef Ribs & Bean Soup

This recipe would definitely be something to fix during your time off from work.  It’s an easy-breezy-no-stress-fix-it and-forget-it hardy meal.

Ingredients

Boneless Beef Ribs or any cheap cut of beef

1 large can of Tomato Sauce

1 large can of Diced Tomatoes

1 medium onion – diced

1 bag of dry beans

seasoning of choice

Cooking Spray

Rinse beans in cool water and strain then dice onion into bite size pieces.  Spray Crock Pot with a cooking spray for easier cleanup.

Layer ribs and sprinkle with seasoning of choice, I crushed a Knorr’s Cilantro Bouillon Cube over mine.

Cover and cook on low for 8-10 hours or high for 4 hours – depending on Crock Pot Model.  Needless to say, the house was smelling delicious and my men loved it!

Crocktober – Cajun Chicken & Shrimp

Hello Friends and Happy Fri-Yay!

Today’s Crocktober Foodie Feature is Cajun Chicken (of course) AND Shrimp

Friday Foodie 10 22 001

 Ingredients:

  • 1 pound skinless chicken thighs
  • 1 large onion
  • 1 can stewed tomatoes – undrained and chopped
  • 1 garlic clove minced
  • 1 tablespoon sugar
  • 1 teaspoon paprika
  • 1 teaspoon Cajun Seasoning
  • 1 teaspoon black pepper
  • 1 pound shelled shrimp, deveined and cleaned
  • 1 tablespoon lemon juice
  • Hot Sauce to taste
  • 1 cup of prepared rice
  • * diced red pepper and celery rib can also be included

Spray Crock Pot with cooking oil

Place chicken thighs in Crock Pot, top with onion, garlic, tomatoes with juice, paprika, pepper, sugar, and Cajun seasoning

Cover and cook on LOW for 8 hours or HIGH for 4 hours – depending on Slow Cooker

In the last hour of cooking add the shrimp, lemon juice and hot sauce.

Friday Foodie Feature – Stuffed Chicken Breasts

Hello Friends and Happy Fri-Yay!

The days are getting shorter and school started this week so I am lining up my recipes for the Fall.  Chicken is a staple in our house and this was an easy breezy “4 ingredient-less than 40 minute” recipe.

Ingredients:

Chicken Breasts ~ Mozzarella Cheese ~ Minced Garlic ~ Fresh Spinach

Rinsed chicken breast and placed on Wax Paper

Covered with another sheet of Wax Paper and flattened with kitchen mallet

Spread minced garlic and sprinkled with a little black pepper

Layered with Spinach leaves and covered with Mozzarella Cheese

Rolled Chicken Breasts and secured with wooden toothpicks

Sprayed dish and tops of Chicken Breasts with Olive Oil Cooking Spray.  Placed in preheated 350~ oven for 30 minutes and was no longer pink.

Easy Breezy Crockpot Meal – Chicken Tenderloins

Hello friends, I hope you are winding down from a very productive yet peaceful day. I am still tired and will be heading to bed shortly, I may even miss my favorite show, “Real Husbands of Hollywood”.

Tonight’s easy breezy crockpot meal ingredients were: chicken tenders, diced tomatoes, frozen veggies, rice, and black beans

Spray crockpot with cooking spray, layer chicken, frozen veggies and top with diced tomatoes, no other liquid is needed.

Cover, set to low and cook for 6 hours

I added a can of black beans and instant brown rice and let cook an additional 15 minutes

Top with a dollop of sour cream and sprinkle of mint leaves which gave it a unique flavor

Easy Breezy Crock Pot Meal

In my house crock pot cooking isn’t  just for fall and winter months, it’s actually more convenient and a real time saver in the warmer months.  After work the last thing I want to do is turn on the oven or stove especially when it’s hot like it was yesterday.  I would prefer to walk into the house to a fully prepared meal smelling good!  Using the crock pot gives me more time to sit on the “back 40” or take a walk around the neighborhood.

These were the ingredients for Monday night’s dinner.

1 bag of frozen mixed vegetables
2-3 chicken breasts
1 can cream of mushroom soup
1 can of cream of chicken soup
1 jar of mushrooms
Pam Cooking Spray

You can use any cream soups

Spray Crock Pot with Pam or any cooking spray
Put in frozen veggies
Top with chicken breasts or thighs
I cut up an onion and added the mushrooms

You can use dried onions if you don’t have fresh

Sprinkled a dash of seasoning and dried thyme
Covered chicken & mushrooms with soups
Cooked on low for 7 hours
If desired, add a cup of uncooked white/brown rice when you get home

Poured in a cup of long grain rice

Turned off crock pot, stirred in rice, recovered and let sit for 30 mins while I changed my clothes

Dinner is served - I sprinkled mine with cayenne pepper
