Slow Cooked Chili with Jennie-O Lean Ground Turkey

Happy Crocktober!

Cooking in the fall is fabulous especially when you use a Slow Cooker or Crock Pot.

Last weekend I made a Slow Cooked Turkey Chili using Jennie-O lean Ground Turkey.  This is one of the easiest weekend or weekday meals to prepare. The next day leftovers are equally good so make sure you make enough to have some!

I love any recipe that you can dump into the Crock Pot in the morning then come home to a fully cooked meal…and of course a kitchen that smell delicious!

Jennie-O Ground Turkey

Ingredients:

  • 16 oz package of Jennie-O Lean Ground Turkey

  • 14.4 oz package of frozen peppers and onions or Pepper Stir Fry

  • 14.5 oz can of Diced Tomatoes

  • 15.5 oz can of Black Beans rinsed in cold water

  • 10 oz package of frozen corn

  • 1 package of low sodium Chili Mix

  • Optional Ingredients: Cilantro, Green Onions, Cheddar Cheese, Sour Cream, and of course a little of Hot Sauce!

Jennie-O Ground Turkey Chili

You can brown the Ground Turkey first in a little Olive Oil before placing in the Crock Pot, however, I prefer to use frozen Ground Turkey which allows it to thaw as it cooks with the other ingredients.  If you brown the ground turkey first, cook on high for 2 hours, otherwise, on low for 4 hours.

This Turkey Chili can be topped with shredded cheddar cheese or sour cream and of course a little hot sauce.  Hubby loves cornbread and served over rice.

Crocktober – BBQ Beef Ribs

Hello Friends and Happy Fri-Yay!

What a perfect way to kick off the month dedicated to all things food!!!

Friday’s Foodie Feature is Slow Cooked BBQ Beef Ribs – this is one recipe that had my mouth watering and my mind on the Crock Pot all day long.  Since we don’t eat a lot of red meat it was definitely a treat for the entire family!

Crocktober

Ingredients:

  • Beef Ribs
  • McCormick Grill Mates
  • Bottle BBQ Sauce
  • 1 Medium or Large Onion
  • Cooking Spray
  • Water

BBQ Ribs

Place ribs inside a large plastic bag, add Grill Mates Seasoning then rub to coat each rib.

I usually get a few extra produce or meat bags from the grocery store which comes in handy for marinating or dry rubbing meat so that I don’t have to touch it.

BBQ Ribs in Crock Pot

Rub dry seasoning to coat each rib

Lay ribs flat in the bag, then using another bag cover to seal and place in the refrigerator overnight.

Remove ribs from the bag and dice onion

I had some leftover pineapple chunks so I tossed them in over the last layer of ribs. Added a little water to the empty BBQ Sauce bottle, shaken and poured over fruit – “waste not want not”

Cover and cook on LOW for 8 hours

Oh how I wish this was “smell-o-vision” because when I walked through the door…oh la la the aroma was overwhelmingly delicious and I know you would have loved it!

Halloween 2013 003

These finger-licking-good ribs were served with mashed potatoes and string beans to complete our family meal.

If you try this recipe, make sure to come back and let me know how delicious they were!

Have a fantabulous day – Smooches!
