Friday Foodie Feature ~ Shrimp Alfredo

Hello Friends and Happy 1st Fri-Yay 2014!

Today’s Foodie Feature is a 4 ingredient 40 minute meal ~ Shrimp Alfredo

Friday Foodies 010 - Copy

 

Ingredients:

  • Ragu Cheesy Sauce – 1 Jar
  • Thin Pasta – 1/2 box
  • Broccoli – 2 crowns
  • Shrimp – small raw, deveined, tail off

Friday Foodies 013 - Copy

Place frozen shrimp in a steamer pot or double boiler (fill bottom pan with water) – cover and steam on low heat until shrimp turns pink.

Rinse and cut stems from fresh broccoli.  Steam or microwave if you prefer tender broccoli crowns.

Boil water and cook pasta according to box directions, or for approximately 7 minutes.

Friday Foodies 020 - Copy Drain but do not rinse pasta and return to pan.

Add broccoli crowns

Pour in entire jar of Ragu Cheesy Sauce, adding a little water to the empty jar, shake and pour into pan.  Stir to mix ingredients thoroughly and cook on low for an additional 7-10 minutes to heat sauce and soften broccoli crowns.

Friday Foodies 028 Seasoned only with a little black pepper this made for an easy breezy meal and was a big hit with my men.

 attending a Festive Family Holiday Party

attending Sunday Service and getting out before the big snowstorm

making it safely to work in the snow despite the 3 1/2 hour commute

 of course my family, friends and faith!

Festive Family Fun

Hello Friends and Happy Monday!

I trust you all had a great weekend with an opportunity to do something special with your family or friends.  Saturday evening after spending all day sitting on hard gym bleachers at our son’s 1st wrestling tournament, hubby and I attended a festive family event. The family members were some that we had never met before nor did we know they live only 12 miles from us. 

It was at my mother-in-law’s funeral this past summer that a cousin told us about this annual family affair and invited us to attend.  It was a festive evening spent with our new found family members and their wonderful friends.

Family and Football

Hello Friends and Happy Monday

I hope you all had a great weekend, the last one before the official start of the Holiday Season, even though the Christmas commercials, parades and decorations are already in full effect.  According to the Farmer’s Almanac, Winter does not officially begin until December 21st, but the temperatures definitely stated otherwise…it was freezing cold yesterday!  

On Saturday I drove down to Dover to meet up with my cousins from Jersey, we met at DelState for the DSU -vs- Morgan State football game.

Unbeknownst to me, I had a 2nd cousin who is on the Morgan State Football team, Marcolm Banks is a freshman and a Fullback for the Morgan State Bears.

Fam and Football 146 His mother, my cousin Michelle and I were very close growing up but had a falling out in 1990.  It was a stupid arguement, she got upset with me because I didn’t want kids at our Wedding reception and at the time she had a young daughter.  We stopped talking and 4 years after she gave birth to her second child, Marcolm, she died from cancer.  We never made up nor did I ever apologize and to this day I still regret that…

Family is all that really matters and during this joyful time of the year it’s especially important to share the love and have good times.  I’m asking if you have an estranged family member or friend, please let it go and make up now because life is too short!

Fam and Football As a DelState Alum – Class of ’83, it was the first time that I had sat on the opposing team’s side in the stadium, it was definitely a different view from the stands.

Although DelState lost the game it was fun and the fans, family, and students enjoyed themselves despite the cold wintry winds!

Middletown African Market

Hello Friends and Happy Fri-Yay!

In today’s Friday Foodie I am featuring the Grand Opening of the Middletown African Market located on 725 North Broad Street. Owners Abena Mansah and Kwaku Duah are recent transplants from the Bronx, by way of Ghana.  In partnership with other family members they also owned an African Market in Yonkers, NY.

During their many visits to family and friends in Delaware they were often asked to load up the car with food items to bring with them. These visits also highlighted the need for a place to purchase authentic African and Caribbean foodstuff.  However, in not finding anyone who was interested in doing so they decided to take a leap of faith and left New York to open the Middletown African Market in the Middletown Square Shopping Center.

Abena and Kwaku along with their son came to visit Delaware, fell in love with Middletown and never left, “we love it here”, says Abena, “the people are friendly and the school district is wonderful”.

The Middletown African Market hopes to meet the needs of the large African population in Delaware so they no longer need to travel to Philadelphia or as far north as New York.  The Market’s shelves are fully stocked with African and Caribbean food items, clothing, music, movies, jewelry, beauty and novelty items.

Freezers are stocked with smoked fish, turkey, chicken, beef, cassava and other root vegetables.  Long shelves contain canned meats, fruits, vegetables, bags of rice, wheat, potatoes, dry beans and snack foods. Authentic oils, spices, canned goods as well as fresh Sweet Yams and Plantains are available.

Kente Cloth, Waist Beads, Kufis, and beauty products including lotions with Shea Butter and Coconut Oil, Black Soap, shampoos and conditioners are neatly displayed across the back shelves.

Saturday’s Grand Opening was both exciting and lively with many customers, both African and non-African shopping, sharing and filling their baskets with food items to be used for Sunday’s dinner.  

Middletown African Market accepts all major credit cards, EBT and is open Monday to Saturday, 9:00 am to 8:00 p.m., closed on Sunday.

being a Stylist for Goodwill’s 2014 Runway Fashion Show (click Here)

spending a couple of hours shopping with #2 son – without him complaining

seeing a “Welcome Home” sign for a returning VET in our neighborhood (click here)

taking a nap Sunday after Church – I really needed it

finding pants that fit – which is why I wear dresses and skirts

and of course, my family, friends and faith!

Trying to find pants that fit can be a pain in the you know what!

The leaves are falling as quickly as the temps.  Do you think the snow flurries on Monday are an indication of a severe winter ahead?

The month is already flying by, can you believe that we have less than 18 days until it’s Thanksgiving 2013?  

This is what I wore on the first casual Friday of the month which was by far the best beginning to November that I can remember. After an early morning mini downpour, the temps rose to 78 degrees with bright sunshine, it was almost summer like.

Have you started planning your Turkey Day meal or will you be eating at a relative’s home instead?

We haven’t made any plans and I am not looking forward to asking hubby because it will be the first one without his mother….maybe we’ll just stay home and have a quiet dinner.
