I love the warmer and longer days of Summer because we spend more time outdoors on the deck or around the pool and less time in the kitchen. Last weekend I went grocery shopping to pick up the ingredients to make a Shrimp Boil which was absolutely delicious so I will definitely be making it again. The next time I will document how it was made and also put it in a blog post or video.
It was the 4th of July holiday weekend so we also had to have a few snacks which included no-salt chips and spinach dip, and I also picked up a container of Palmetto CheeseSpread.
As a kid growing up in New Rochelle, NY, Pimento Cheese Spread which came in a small glass jar was a special treat, a treat that we couldn’t always afford. My grandmother would buy a jar during the holidays to spread it onto celery sticks and serve to “company”. I can still remember sneaking a few pieces from the tray to take into my bedroom where I would take my time to enjoy every bite of that pimento cheese spread on a crunchy celery stick, savoring every bite as if it were my last meal.
Now that I can afford pimento cheese spread, instead of simply spreading it onto celery sticks, I decided to copy the pictures from a box of Triscuit crackers and top the Palmetto Cheese Spread with diced cucumbers, sliced tomatoes and Kalamata Pitted Olives.
This quick and easy snack was delicious and has now become one of my favorite summer snacks, there is no need to wait until the holidays!
Palmetto Cheese Spread which is tagged “The Pimento Cheese with Soul” has a kick to it thanks to the diced Jalapeno peppers and it is also Gluten Free if you need that as part of your diet. Palmetto Cheese Spread is one of my favorite summer snacks which I will carry over to the holidays, but of course it will be spread onto celery sticks for “company”. #childhoodmemories

Ingredients:
1 Cup Red Sangria

1/3 Cup of Watermelon
Combine Sangria Red wine, ice cubes, and watermelon in a blender; process until smooth. Serve immediately or freeze. This quick and naturally sweet (sans sugar) summer slush got me in and out of the kitchen in a jiffy.

I hope you all are enjoying this beautiful end of the summer Saturday. I know summer doesn’t officially end until September 22nd, but for some strange reason, the Middletown Old Tyme Peach Festival seems to mark the end of it for me.
The Peach Festival was actually held last weekend and Malik and I were only able to spend about an hour there. Most of the morning we were in Walmart shopping for dorm supplies so unfortunately by the time we arrived there were no peaches left!
You have to get there early to even get a slice of peach pie from the M.O.T. Jean Birch Center. The crowds were large and the weather was warm but not an oppressive heat as it had been in previous years.
A few places likeThe Java House and Off the Kuff were no longer in business, instead they were replaced by Jewelpalooza and Candy Connections both great shops especially for this kid-friendly town.
Thankfully, Saving Grace Christian Bookstore was still open so we popped in there for a short visit. There are so many great gift ideas so make sure to pick up something for the holidays.
Now that the fireworks from the 4th of July and the parade of the Peach festival are over, there is one last major summer event in Middletown, the M.O.T. Big Ball Marathon.
This fun, and family friendly fundraiser is held during the Labor Day weekend and then that will definitely mark the end of the Summer 2014!

There’s something fun and exciting about weekends in the summer, it doesn’t matter if you have plans to travel or are just staying home they just seem to be much more enjoyable.
The longer days, the lighter foods and of course lounging poolside always makes me feel better, how about you, what makes your summer weekends more enjoyable?
Friday’s are also casual work days which means I can wear jeans, not ripped or boyfriend jeans, but my summer whites which fits the bill as being corporate casual.
I am always afraid that I will turn back into a 5 year old and spill something when wearing white, but I made it through the day without an incident! The jeans and Vera Wang camo tank are both thrifted, and the sandals which were purchased several years ago completes the outfit.
I chose brass accessories to match the brass links in the sandals as well as a coordinating blend in with the camouflage tank. The bracelets are from Burlington Coat Factory, ring and watch from Avon and brass chain from Michael’s.
I wore these jeans a week later which if you remember were just a dollar on clearance at JC Penney. This was actually the day before the 4th Holiday and I was a bit ruffled because I had been running around after work shopping.
Striped top was thrifted from Goodwill, the scarf also $1.00 from Dollar Tree and the blue and white polka dots flats were purchased from Rugged Wearhouse for less than $10.00.

I remember when I just wanted him to sleep through the night…to learn how to walk…to learn how to talk…to learn how to feed himself…to be potty trained…to start school…to get his driver’s license and after all that happened…this is him today ~ an 18 year old mini man!
