Slow Cooked Turkey Cacciatore

I love my Crock Pot and use it not only to save time in the colder months but also in the summer, especially on Sundays.  I can prepare a meal before I leave for church and by the time I get home there’s nothing to do but relax until dinner is done.

 

Thanks to Jennie-O I was able to create a Slow Cooked Turkey Cacciatore that the entire family enjoyed.

Turkey Caccitore AVI

Ingredients:

1 – Jennie-O Turkey Tenderloin – sliced

6 – Sweet Peppers – sliced

1 – Medium Onion – sliced

2 – cans diced tomatoes

2 – tsps of minced garlic

 

Parsley or Italian Seasoning (optional)

Angel Hair Pasta or Rice

 

Instructions:

 

Wipe inside of Crock Pot with Olive Oil, use a paper towel

Slice Turkey Tenderloin into 8 equal slices

Add peppers, onions, diced tomatoes, garlic and seasonings

Cover and cook on low for 6 hours or high for 4 hours

Serve over Angel Hair Pasta or Rice

Turkey Sausage Biscuits

I always look forward to having Sunday Brunch which is by far the best meal of the week.  Whether I am staying home lounging in my PJ’s or coming in from church, I always like to make something that is quick and easy yet satisfying enough to keep me full until dinner.

Thanks to Jennie-O and the fact that I am a *Switch Circle member, I can always count on having a package of Turkey Sausage on hand which is a great ingredient to have when making a quick and satisfying Brunch meal.

Sunday Brunch Recipes

 

Ingredients:

1 – 16 oz package Jennie-O Turkey Sausage

1 – 16 oz package of Jumbo Buttered Biscuits

3  Plum or Small Tomatoes – sliced

1/2 cup of Shredded Cheese – add more if you love cheese

Cooking Spray

JennieO Turkey Sausage

Instructions:

Preheat Oven to 350 degrees

Coat skillet with cooking spray and cook Turkey Sausage until done and no longer pink (approximately 15 minutes) – set aside to cool

Coat cupcake pan with Cooking Spray

Open container of Biscuits and flatten by hand before placing one into each cupcake mold – careful not to press too hard to tear biscuit

Top with a few spoonfuls of cooked Turkey Sausage

Sunday Brunch recipe

Add a slice of tomato

Top with Shredded Cheese – add more or less depending on your preference

topped with sliced tomatoes shredded cheddar cheese

Place pan into oven for approximately 25 minutes or until the Biscuits are browned and fully cooked and cheese is melted.

Serve with Fresh Berries.

Switch To Turkey ~ Hot Dogs wrapped with Bacon

Hello friends,

Happy Labor Day 2014, the unofficial end of the summer (BOO!!!). I can’t remember a summer flying by as fast as this one did, how about you?

So what are your plans for the grill today? It’s going to be a gorgeous day here in Delaware so I’ll be outside cooking later this afternoon.  However, if you are staying indoors but still want grilled hot dogs you might want to try this tasty recipe.

Switch to Turkey Dogs

I used Jennie-O turkey products because we don’t eat pork and not a lot of beef.   I wrapped a slice of turkey bacon around each hot dog then secured them with two toothpicks.

Pour a little olive oil in the skillet and allow the bacon wrapped dogs to cook for approximately 15 minutes, turning to keep them from burning.

Once the bacon is crispy, add chopped onions and peppers, turn heat on low allowing the peppers and onions to soften for a few minutes longer.

Remove toothpicks and turn hot dogs to ensure they are thoroughly cooked.  In the meantime, toast your bun.

Spinach & Feta Cheese Frittatas | #Jennie-O

Hello Friends and Happy Fri-Yay!

As a family we don’t eat pork nor a lot of red meat so most of the time my meals are made with either chicken or turkey.  Before becoming a member of the JENNIE-O Switch Circle, I had always purchased Jennie-O bacon and breakfast sausage which my son loves and I use the ground turkey in my lasagna and tacos.

This partnership is perfect because now when I receive coupons and merchandise from Jennie-O, it gives me an opportunity to try new recipes and then share them with you.

Today’s Friday Foodie Feature is

Spinach & Feta Cheese Frittatas with Turkey Bacon

 

Ingredients

  • 1 package #JennieO Turkey Bacon
  • 7 eggs
  • 1 cup fresh spinach chopped
  • 1/2 cup onions chopped
  • 1/3 cup Feta Cheese
  • 1/3 cup milk
  • pepper to taste
  • cooking spray

Frittata made with JennieO Turkey Bacon

 Preheat oven to 350 degrees.  Spray cold skillet with cooking spray then prepare JennieO Turkey bacon according to package instructions and set aside.

Fry bacon and set aside

Rinse and remove stems from spinach leaves, chop them and 1/2 of the onion into bite size pieces

Rinse spinach leaves and chop Saute both in same skillet used to cook bacon until spinach is wilted

Saute spinach and onion  

Whip eggs, feta cheese, milk and pepper before adding spinach, onions and bacon.  Cut bacon into bite size pieces, I use kitchen shears to make the job easier.  

Because we drink Ricemilk I recently starting cooking with it, and find that foods tastes just as good if not better than when made with whole milk.

Add bacon, spinach and onions to egg mixture

Spray muffin pan with cooking spray to prevent sticking then pour or spoon mixture into each cup approximately 2/3 full.

 Fill cupcake pan 2/3 full

Bake 20 minutes, then watch out because they smell wonderful and my son couldn’t wait to try them!  

Grab a cup of coffee or tea then sit back, relax to enjoy a leisurely breakfast or an afternoon snack.

 What I like about this recipe is that I can make the Frittatas the night before, then hubby and the boys can warm them up the next morning in the toaster oven.
