The weather is getting warmer and starting Sunday the sun will be out longer so it’s time to make my dinner meals quicker and easier.
I will continue using the Crock Pot but this easy breezy, 3 ingredient recipe is perfect for the mid-week or even a weekend meal when wrapped in a tortilla and sprinkled with cheese.
Ingredients
3 Individually Wrapped Packs of Chicken Breast Tenderloins
1 Package Frozen Stir Fry Veggies
Cooked Rice
Olive Oil Cooking Spray
Seasonings
I love using these individually wrapped chicken breast tenderloins and keep several of them in the freezer.
I only need to use one portion when it’s just hubby and I, however, since Tayair decided to grace us with his presence I used 3 packages and it was more than enough for all of us.
As a matter of fact, I had an extra piece of chicken to use in my salad the next day.
Instructions
Coat the skillet with an Olive Oil Cooking Spray
Cook chicken tenderloins on medium heat until no longer pink, please note that the safe internal temperature for cooked chicken is 165°
Turn down heat to low, add package of frozen veggies and cover for approximately 15 minutes
Cook rice according to package directions
Top rice with chicken and veggies and sprinkle with seasoning of choice, I used Ground Cumin, Hot Madras Curry Powder and Dried Parsley
This was an easy breezy simple and delicious meal, you gotta try it!
The Fire Hall was filled with tables of more than 95 business owners ranging from AHDTV Network to Uncle Mike’s Ice Cream and Water Ice. As a new member of the Middletown Area Chamber of Commerce I was there representing ABlake Enterprises, Social Media Management & Consulting and was able to share a table with my partners, Mike, Trisha and Ari Fox of Splash DesignWorks.
It was a beautifully bright day which drew a huge crowd of more than 1000 attendees, young and old alike including some very adorable young entrepreneurs who were sharing the table with their parents.
Balloons, Banners, Chair Massages, and Giveaways added to the excitement of this fun and festive family event. I have lived in Middletown for over 23 years and had never attended an Expo which is now in it’s 8th year, I will however, never miss another one!
The 2016 MACCDE Spring Expo was not only a great place to network and connect with local businesses in the area, it was also a great venue to see old friends and meet new ones.
Sipping on freshly made lemonade from Bahama Breeze and noshing on a pasta and shrimp dish from Pat’s Select was the highlight of my day. However, for the winners of the many door prizes ranging from a Flat Screen TV to a month of FREE food, I’m sure it was probably an even better one for them.
The little ones who stood quietly by their parent’s side were also treated to food and fun. Goodies including slices of pizza, sweet treats of personalized cookies, cupcakes, and water ice. Giveaways and chatskis such as glow in the dark pacifier necklaces, Frisbees and free passes to the Dover Skating Center also delighted them.
And for the bigger kids adults who also stood quietly in line they too were treated to sweet treats – samples of wines from Kreston Wine & Liquors and Crow Farm & Vineyard.

8 Healthy Habits You’re Not Doing (But You Need To Be)

Jim Rohn said “Take care of your body. It’s the only place you have to live.” While we all want to take care of our bodies, we tend to get a little lazy here and there, neglecting do many necessary things to keep us healthy. We all do it – our lives become hectic and we decide that we don’t have time to do the little things, or we simply forget. Unfortunately, neglecting these little things takes a toll on our overall health. Make a change today by finding time to create the eight healthy habits below.
Getting Enough Sleep
We are all culprits of not sleeping enough. Some people see it as a waste of time, others just can’t seem to find the time to do it. Research, however, has proven that getting enough sleep will help you be more successful throughout the day. It sharpens your mind, eases stress, decreases the risk of accident and injury, and increases the chance of developing diseases such as heart disease and cancer.
To help yourself sleep better, don’t drink alcohol or coffee for four hours before bed. Create a bedtime routine that starts one hour before you want to be in asleep to help you wind down. Turn off all electronics during this time. Go to bed and wake up at the same time every day, regardless of whether or not you need to. Exercise more often to help you sleep better at night.
Flossing Your Teeth
While half of all Americans brush their teeth about once a day, nearly 80% of don’t floss their teeth. Your toothbrush cannot reach every crack and crevice between your teeth, and if you do not floss, it increases the risk of plaque, gingivitis, and cavities. If your gums bleed whether you are in a dentist’s chair or just when you floss at home, it is an indicator that you are not properly taking care of your teeth. You should be brushing and flossing twice per day for optimum dental care.
Drinking Enough Water
How much water do you drink a day? A cup? Two cups? It is recommended that you drink ½ oz to 1 oz of water for every pound that you weigh, every day. So if you weigh 145 lbs, you should drink about 70-145 ounces of water a day. Of course, that range depends on your circumstances. You need to drink more water if you are exercising or if you are out in the sun than if you are sitting at your desk.
Fortunately, all of this liquid does not have to come from just drinking water. You can drink juice, eat soup, or eat a popsicle, just make sure that you avoid alcohol and soda as those can dehydrate you more. Remember that if you only drink water when you feel thirsty, you are already dehydrated. Sip water throughout the day for a healthier life.
Washing Your Face
We all know the importance of washing your face, but few people actually do it every night. During the day, your face collects dirt, dust, bacteria, and more. Washing your face every night with lukewarm water will remove any buildup that you have accumulated throughout the day.
Massage a gentle cleanser into your face for thirty seconds to a minute to properly clean the face. Rinse with water and pat dry. Rubbing dry can damage your skin and create wrinkles.
Cleaning Under Your Nails
Finger and toe nails are one of the germiest places on our bodies, but we rarely take care of them the way we should. The black gunk under your fingernails is dirt, lint, keratin debris from your nail, as well as skin cells. If it is every green, that means that you have bacteria living under your nails. You need to be extra vigilant in taking care of your nails if you have artificial nails as there are tiny spaces perfect for bacteria growth.
Put soap in the palm of your hand and scrub your nails clean in a circular motion, using your palm. If the buildup is particularly bad, you can sweep under them with an orange stick. Be gentle when cleaning under your nails because you can separate your nail from the nail bed if you are too rough.
Leaving Your Face Alone
Resting your hands on your face at work, picking your face, or just touching your face is terrible for your skin. There is a lot of oil and bacteria on your hands, so leave your face alone. Picking your face will actually make you break out more, break down your collagen, cause scarring, spread bacteria, and make it more difficult for your skin to heal. Touching your face, like picking your face, also spreads bacteria. Find something else for your non-dominant hand to do while you’re scrolling through your social media feed, like playing with a spinning ring or twiddling a pencil.
Exercising
It is recommended that you exercise 30 minutes a day 6 days a week. However, very few people actually find the time to do so. Exercising decreases the risk of many diseases, and helps you stay young and healthy. To help you exercise more often, keep an extra change of workout clothes in your car, buy clothes that you like, follow a fitness guru on social media, and set daily reminders on your phone.
Spending Time Outdoors
Being trapped at a desk during your 9-5 job can make it difficult to see the sunshine, let alone spend time in nature. Spending time outside can help boost your focus, creativity, improve your mood and self-esteem, increase your Vitamin D levels, as well as heal your body and soul. The earth has a negative charge, and “plugging in” to the earth (by walking barefoot in the grass or sand) can help rejuvenate your body.
Take an afternoon walk, eat outside, exercise outside instead of in a gym, or just go sit on your porch for a few minutes. Even spending five minutes a day outside can change your life.

Last weekend I was able to enjoy one of my few unscheduled Saturdays so I took full advantage of it and decided to get a jump start on a little Spring Cleaning.
With the sun’s rays shining through the windows it was obvious that the dust bunnies had multiplied over the winter!
As you know, I have two sons, Malik, who is away at school at Bowie State University and Tayair is home attending the CLSC Program at the University of Delaware.

When Malik is away his bed is striped of it’s sheets and coverings so I started by spraying his mattress pad and pillows with the Renuzit Trigger Spray.

Last week I had the pleasure of being part of the “Out of the Box Business Panel” hosted by the Delaware Financial Literacy Institute (DFLI) in celebration of National Entrepreneur Week.
These two free workshops were held at the Wilmington and Dover libraries which were great venues for attendees who came seeing information on either starting or expanding a current business.
Ronni Cohen, Executive Director of DFLI and Keyanna Mozie, Program Director kicked off each evening with a brief introduction of the program and that of it’s moderator, Terrance Vann.
Terrance Vann is not only a great moderator, he is also a very talented artist who’s work can be seen on his website www.TerranceVann.com and on his Instagram page.
On Thursday the workshop was held at the Dover Library, and Daneya Jacobs from Candy Connections joined Jaimie, Queon and myself.
We began with a brief introduction of ourselves and of our business, then the moderated questioning began. I can honestly say that not only did the attendees receive great take-away information, I think each of us on the panel did as well – at least I know I did.
National Entrepreneur Week was designed to celebrate American entrepreneurs and the lifelong learning educational opportunities that prepare the NEW business leaders of the future.
The Week is in response to the U S House of Representatives Resolution #699, supporting an annual National Entrepreneurship Week and encouraging the celebration of it annually at the local, state, and national levels.
Despite the cold temps and drenching rain those in attendance who had braved the elements came armed with insightful comments and questions. Questions ranged from how to take the ideas in their head and write a business plan to what are some of the licensing and insurance requirements for starting a business in Delaware.
Conducting these workshops in the libraries was great because public libraries contain numerous resources to help those searching for employment, starting or expanding a business and even studying course work online.
Over the past 13 years, DFLI has also become “A Community of Learners, A School Without Walls,” providing a host of services to adults, women, youth and families. DFLI’s signature program, The Money School, provides hundreds of students throughout the state with more than 600 free financial education classes.
Thousands of students have learned how to manage their money and save with DFLI’s award winning program, Bank At School. Programming such as From Purses to Portfolios, Money Clubs, and Passport to Prosperity offer women a wealth of resources, special programs and events, all to help participants take charge of their money.
DFLI’s newest program, The Center for Business Growth, provides small businesses with the critical entrepreneurial and financial skills necessary for business success and it was an honor being part of these fantastic workshops.

Dr. Rebecca Lee Crumpler: First Black Female Doctor
Rebecca Davis Lee Crumpler was born free around 1831 to Absolum and Matilda Davis in Delaware. She was raised by an aunt in Pennsylvania who is noted to have provided health care to her neighbors. In 1852 Davis was living in Charlestown, Massachusetts where she worked as a nurse for eight years. She enrolled in the New England Female Medical College in 1860. Her acceptance at the college was highly unusual as most medical schools at that time it did not admit African Americans. Despite its reluctance, the faculty awarded Davis her medical doctorate.
That year she also married Arthur Crumpler. Dr. Crumpler practiced medicine in Boston and specialized in the care of women, children, and the poor. She moved to Richmond, Virginia in 1865 to minister to freedpeople through the Freedmen’s Bureau. Crumpler returned to Boston in 1869 where she practiced from her home on Beacon Hill and dispensed nutritional advice to poor women and children. In 1883 she published a medical guide book, Book of Medical Discourses, which primarily gave advice for women in the health care of their families.
Dr. Rebecca Davis Lee Crumpler died in 1895 in Fairview, Massachusetts. Though her story was long forgotten, today she is honored for her groundbreaking achievements. In 1989 Saundra Maass-Robinson, M.D. and Patricia Whitley, M.D. founded the Rebecca Lee Society, an organization which supports and promotes black women physicians.

Now that hubby has a little more energy after being chemo free since January, he has started doing more of the grocery shopping. Years ago when he would shop, nine times out of ten he would bring home items that I normally wouldn’t buy.
He would bring home foods that were high in sugar or sodium, like Lemon Meringue pies, Chocolate Chip Cookies and canned foods. But that has since changed and he is paying closer attention to product labels.
However, the one food that we both always bought was fresh fish especially Salmon. Last week hubby decided to buy a package of frozen Tilapia filets which turned out to be a perfect alternative and it made for a great quick weekend meal.
Normally I bake fish with just a little lemon juice and olive oil but this time I decided to make fish tacos and they turned out pretty good.
Using the following ingredients we had these awesome Fish Tacos for dinner
Ingredients:
3 Frozen Tilapia Filets
1 Package Ortega Fish Taco Seasoning (use 1/2 pack for less sodium intake)
1 Box Ortega Fiesta Flats
1/4 cup thinly sliced green onions (scallions)
1/4 cup chopped fresh cilantro
8 oz container of Sour Cream
3 Tablespoons Mayonnaise
1 Teaspoon Minced Garlic
1 Teaspoon grated lime rind
Juice from a small lime
Shredded Cabbage (optional)
Shredded Cheddar Cheese (optional)
Instructions:
Preheat oven to 425 degrees
Coat pan or cookie sheet with Cooking Spray
Cook fish filets in the oven according to package directions
Chop onions and cilantro then place in a bowl, pour in Fish Taco Seasoning Mix, add Sour Cream, Mayo, Grated Lime Rind and juice from the lime. Stir until mixed thoroughly.
Fish is done when it flakes easily, test with a fork before removing from the oven. Add fish to the bowl or add some of the mixture into the pan and stir lightly with a fork to coat.
I only used 3 Tilapia fillets, but you will have plenty of sauce to use for at least 12 Fish Tacos.
Divide fish evenly among Fiesta Flats and top with shredded cabbage and cheddar cheese.

William Julius (“Judy”) Johnson was born in 1899. He was an African American Negro League baseball player.
Born in Snow Hill, MD. Judy Johnson was the son of William Henry and Annie Lee Johnson. His father was a sailor, a licensed boxing coach, and the athletic director of the Negro Settlement House in Wilmington. William Johnson wanted Judy to be a boxer, and Judy learned to box from his older sister, Emma, but Johnson, who was 5′ 11″ (1.80 m) and 150 lb (68 kg), was far better suited for a career in baseball.
After working as a dock worker during World War I, Johnson began his baseball career in 1918, reaching the top-level Negro Leagues in 1921 with Hilldale, a team for which he played through 1929. In 1918, for five bucks a game, his semi-pro career began with the Bacharach Giants.
The following year he tried out for the Philadelphia Hilldales, the premier team in the area. He failed to make the cut and joined the local Chester Stars to develop his skills. In 1921, he signed with the Madison Stars before finally making his professional debut with Hilldale of the Negro Leagues in 1922.
In 1930 Johnson was a player-coach for the Homestead Grays, and in that capacity he discovered Josh Gibson. From 1935 through his last season in 1938, Johnson was the captain of the Pittsburgh Crawfords, one of the greatest franchises of all time. Although his playing days preceded the break of the color barrier by nine years, Johnson became the first Black assistant coach for a major league team in 1954.
He was inducted into the Hall of Fame in 1975. Johnson Field at Wilmington’s Frawley Stadium is named for him. Johnson is known as Delaware’s folk hero of the diamond. Judy Johnson died on June 15, 1989, in Wilmington.
