Save aLot Savings?

I stopped at Save aLot to pick up a few items and was a bit disappointed that the lines were long and there weren’t any cashiers at the registers. It was overheard that they can’t afford to bring in cashiers so are using store managers to ring up purchases. Not sure if this is what they mean by “SAVE A LOT” – so sad!

FAT ~ FREE ~ FRIDAY !!

Woohoo, it’s FRI-YAY, the Friday before a holiday – let the eating and drinking begin (oh wait… a few more hours before the drinking can begin)! At least once per quarter a coworker and I leave our desks for lunch and go to PrimoHoagies. for the best hoagie (wedge to a New Yorker, sub to a Delawarean) this side of town! Their menu is gigantic, it takes several minutes to read and then decide what I want and there are always free samples to try while waiting. Today’s freebies were pasta salads and Herr’s Pretzels. Having a Primo Hoagie for lunch is a great way to end the work week and begin the weekend.

Week of Whole Food Smoothies

I love smoothies and this week I decided to have one each day as a breakfast meal substitute.  I don’t use measurements, I just put in a few handfuls of greens, fruits, enough liquid for smooth blending and a dash or two of agave.

Monday – Blueberries, Vanilla Rice Milk, Kale, Agave

Tuesday – Banana, Vanilla Rice Milk, Spinach, Agave

Wednesday – Spinach, Kale, BlueBerries, Vanilla Rice Milk, Agave

Thursday – Spinach, BlueBerries, Banana, Vanilla Rice Milk, Truvia, Instant Coffee

Friday – Banana, Spinach, NonFat Vanilla Yogurt, Fresh Mint Leaves, Agave


OOTD – Tropical Thursday

Conversation this morning:
Hubby:…whoa…you look good….
Me: what!!?…
Hubby: no, you just don’t look like you are going to work
Me: what…too much?!
Hubby: no…no…I just said, you look good

Okay, so he said, I looked good…but what…too much? That’s it…it’s official….today is Tropical Thursday and I am on vacation – MENTALLY!!! NO WORK – .NO WORRIES….sssh just don’t tell anybody – I want this dream to last all day!!

I remember seeing this tropical print dress at Goodwill and immediately thinking about sitting on a beach, with an umbrella drink in my hand. Unfortunately there are no plans to do that so I figured I might as well wear the dress and daydream about sitting on a beach with an umbrella drink in my hand. Thanks to the soaring temps today it’s helping to feed the fantasy.

Cosmetic Brush Cleaner

I am not one to clean my makeup brushes on a regular, but when I do I like using elf Brush Shampoo. On average I spend 35-45 minutes getting ready for work (takes longer the older you get), and it only took a few extra minutes to clean the brushes. I let them air dry flat on a paper towel and they were ready to be put away before bedtime. I remember sending a Twitter message to Sam Fine and his recommendation was to air dry brushes flat as opposed to on an angle.

I purchased the elf Brush Shampoo at Target and this desk organizer from Goodwill, it’s perfect to hold my brushes .

OOTD – Sizzling Summer Sun

Alrighty now….here we go again…the next heatwave is coming.  Excessive heat warning is in effect starting tomorrow with temps reaching 97 on Saturday.  I miss the days when I could work from home because I would definitely be poolside with my laptop on Friday!  Oh well, those days are long gone and now I can wear my old favorite summer work clothes starting with this 2 piece skirt and top set.  The sandals were purchased from Burlington Coat Factory last year to wear to my son’s graduation, but they weren’t comfortable enough to be worn all day so they ended up in the back of the closet.

Getting ready for Heatwave #2


Blah Blah Boring Chicken to Oooh La La Coconut Chicken

I cook chicken so often that I’m afraid one day we’ll sprout feathers!  We like chicken, it’s quick, easy to prepare, and cheap but sometimes it can be BORING.  Yesterday I came across a recipe by Caramelpotatoes.com and since I had all the ingredients I decided to give it a try.

Ingredients:

1.5 lbs chicken tenders ( I cut up chicken breasts into chunks)

1 egg

1/2 can sweetened condensed milk (I used unsweetened coconut milk)

1 1/4 cups coconut

1 cup bread crumbs or Panko (I used both)

1/2 cup melted butter

Preheated the oven to 400~
Used parchment paper to line baking sheet

Cut up chicken breasts into chunks

Egg and coconut milk on one side
Coconut and Panko on the other side

Dipped chicken into egg/milk mixture

Coat both sides of chicken in crumbs and coconut

Placed chicken on baking sheet covered with parchment paper

Poured melted butter over the top – the next time I will use PAM to save the calories

Baked 15 minutes on each side and then an additional 20 minutes. I could have turned on the broiler to darken but wanted to keep them moist.

Dinner is served!
Tayair was the only one who didn’t like it because he doesn’t like coconut.


Nana's Jewelry Box

My sons were blessed to have had their great grandmother living with them since birth. My maternal grandmother who raised me, had lived with us for 16 years until she passed at the age of 98 on May 1, 2009. My sons enjoyed being with her just as much as she enjoyed being with them. When they were toddlers she read to them and played a lot of games with them.  Even when she could no longer get down on the floor she still played and BEAT them in checkers..  Yes, she beat the babies – hey they had to learn defeat at some point in their lives!

She transitioned about an hour before they got home from school so they were able see her, say goodbye and shed their tears before the mortician came to get her body. To this day, they believe that Nana is watching over them and oftentimes talk about the good times and how much they still miss her.  A week ago I got a call from the school because Malik was crying uncontrollably, he later admitted that he was thinking about Nana and all his emotions came pouring out. So it’s no wonder that he got mad at me when I tried to sell a jewelry box that once belonged to her at last weekend’s flea market. It was marked $3.00 but no one bought it – I guess there was a reason,  so I told him that if he really wanted it he could keep it, we changed it to fit his bedroom decor (lol).

I truly love my son because his heart is pure.
