Celebrating Galentine’s Day

We all know that Valentine’s Day is a great time to tell your significant other just how much you love and care about them.  But what about the other important people in your life, yes, your girlfriends, when do we celebrate them?

Oftentimes, we forget about our girls whether they are our co-workers, neighbors or even a bestie since grade school.  They bring joy and happiness into our lives so this year I am recognizing two of them with sweet treats from Shari’s Berries and we are celebrating Galentine’s Day today (officially on the 13th).

Galentines Day

I brought in Shari’s Berries and Caramel Pretzels to share with two co-workers who are always there when I need a listening ear, or there to wipe away a tear or just there because they care.

I wanted them to know that I appreciate their support and to also add a little sweetness to our mid-morning snack.

Crock Pot Lasagna – Valentine’s Day Dinner

Next Sunday is Valentine’s Day and I was trying to come up with a recipe that both hubby and I would enjoy but didn’t want to spend all day in the kitchen.

Having seen this recipe online, I decided to give it a try with a twist and trust me it tasted better than it looked!  Hubby wasn’t too sure about using uncooked lasagna noodles in the Crock Pot, but I assured him that they would be done without having to boil them first.

Valentine's Day Dinner

2 Jars Marinara Sauce

Lasagna Noodles (uncooked)

2 packages Turkey Meatballs

1 Medium Red Onion chopped

1 Container of Ricotta Cheese

1/2 Package Mozzerella Cheese

1 Package frozen Spinach

1 Container fresh mushrooms (washed thoroughly)

Cooking Spray

Ingredients for lasagna

Coat Crock Pot with Cooking Spray

Pour a small amount of Marinara sauce onto the bottom of the Crock Pot

Break noodles in half and lay a few on top of the Marinara Sauce

Spread a little Ricotta Cheese on top of noodles

Add a few meatballs, onions, mushrooms and spinach

Top with a little more Marinara Sauce

Continue another layer of ingredients until Crock Pot is full

Pour remaining Marinara Sauce over all ingredients and top with slices of Mozzarella Cheese.  Cover and slow cook on high for 4 hours or low for 6 hours depending on the model of your Crock Pot.

Slow Cooked Lasagna

Top with Crushed Red Peppers to spice it up a bit then pour yourself a glass of wine and relax until dinner time!

Do you have a special recipe for Valentine’s Day or will you and your sweetie be heading out to dinner?

Valentine’s Day Dinner & Dessert

Hello Friends and Happy Valentine’s Fri-Yay!

Today’s Friday Foodie Feature is Slow Cooked Chicken Cacciatore and Strawberry Shortcake in a Glass, a dessert inspired by Modern Christian Homemaker from last week’s #WWDParty.

Slow Cooked Valentine's Day Dinner

I hope you are enjoying your Valentine’s Day, perhaps you received Roses at work and are the envy of all your cubicle mates, or maybe were awaken to an early morning DELIGHT followed up by a bountiful breakfast, no matter what it was, I hope you left some room for a little dessert!

This week’s Slow Cooked meal is Chicken Cacciatore, another easy breezy Crock Pot Meal.

  • 4 bone in chicken thighs – skin removed

  • 4 chicken drum sticks – skin removed

  • 1 can of Italian Style diced tomatoes or sauce

  • 1 Package of Mushrooms or jar of whole mushrooms drained

  • 1 teaspoon of Italian seasoning or oregano leaves

  • 1 package of frozen onion and peppers (fresh if prefer)

  • 1 tsp of minced garlic

  • 1/4 cup water

  • 2 tablespoons all-purpose flour

  • Linguine or fettuccine or spaghetti pasta

Ingredients for Slow Cooked Chicken Cacciatore

Remove the skin from the thighs and drumsticks which is the worse part of this recipe, next time I will buy skinless chicken!  If using fresh mushrooms, wash to remove excess dirt.

Remove skin from the chicken, and wash mushrooms thorougly

Spray Crock Pot with Cooking Spray for easier clean up then put chicken, veggies, tomatoes, garlic and seasoning into the pot.

Place chicken, veggies, tomatoes, garlic and seasoning into Crock Pot

Cover and cook on low for 6-8 hours depending on Crock Pot model

Cover and cook on low for 6-8 hours

About 15 mins before serving, prepare pasta according to box directions and remove chicken and veggies from Crock Pot.  Place in a serving bowl and cover to keep warm.

15 mins before serving remove chicken and veggies from Crock Pot and place in covered dish to stay warm Mix flour and water in a small bowl, then add to the liquid in Crock Pot and let cooks for 5 to 10 minutes so it can thicken, then pour over chicken and veggies.

Mix water and flour then add to liquid in Crock Pot

Mix flour and water and add to liquid in Crock Pot and cook for an add'l 5-10 mins

Chicken Cacciatore

Now on to the best part of dinner – Dessert!

Strawberry Shortcake in a Glass

  • Fresh Strawberries
  • Dessert Shells
  • Chocolate Pudding
  • Whipped Cream

Wash and Slice Strawberries

Break up a dessert cake putting a few pieces into the bottom of the glass, add some strawberries, a few more pieces of the dessert cake, 1 container of chocolate pudding and top with whipped cream … WhaLaa – Dessert is Done!

Place strawberries, broken pieces of cake, pudding and whipped creams - dessert is done

Enjoy your dinner and dessert!

Which were your favorite commercials, mine were the “Doritos” and “Cheerios“, both with cute kids and family fun.  What was up with the Maserati commercial, I liked it, but who was their target audience, the fans in the private Box Seats?  Oh well, now we have Valentines Day to look forward to – chocolate and wine – both of my favorites.

Last Friday was another great #WWDParty, thank you to all who linked up and shared, and welcome to those linking up today for the first time.
