I will be the first one to admit that as much as I like cooking, I am not much of a baker, however, I couldn’t pass up trying the recipe shown on the back of the box of the Limited Edition Triscuit Cranberry & Sage crackers.
Sweet Potatoes are a Superfood packed high in calcium, potassium, and vitamins A and C and during this time of year they are very inexpensive. Sweet potatoes are often confused with yams, but yams are large, starchy roots grown in Africa and Asia.
Sweet potatoes contain an enzyme that converts most of its starches into sugars as the potato matures. This sweetness continues to increase during storage and when they are cooked so when you add just a little brown sugar – POW – Sweet Goodness!
1 Sweet Potato
3 Triscuit Cranberry & Sage Crackers, coarsely crushed
1 Tbsp brown sugar
1-1/2 tsp. flour
Heat oven to 350 degrees
Poke several holes around the sweet potato then wrap in foil
Bake for 45 mins to an hour until tender – check with a fork
Allow potato to cool slightly, meanwhile combine the sugar, flour and crackers
Remove potato from the foil and place in a shallow pan and top with cracker mixture
