the summer may be fading fast, but don’t put away the grill just yet, why not fire it up and make some chicken kabobs for dinner tonight? Kabobs are a quick and easy way to cook both your meat and veggies together on a stick whether it’s with chicken, beef or seafood.
If using wooden skewers, allow them to soak in water for about 15 mins, this will prevent them from scorching or burning too badly.
I like using cherry tomatoes, mushrooms, onions and sweet peppers.
Cube boneless, skinless chicken, then sprinkle on a little pepper and any seasoning of your choice.
Thread chicken cubes and veggies onto the skewer.
Before placing the kabobs onto a high, preheated grill, spray them with a little cooking spray or brush with olive oil. Grill for approximately 10 minutes or until done, you can also brush on a little barbecue or hot sauce if you prefer.
You know me, I have to have a little something sweet, so for dessert I made Krusteaz Lemon Bars but with a twist, crushed Lemonhead Candy sprinkled on top.
Following the directions on the box, I baked the Lemon Bars then allowed them to cool before adding some crushed candy.

Hello friends,
I remember when I was growing up my grandmother always had to have “a little something sweet” after eating dinner. She believed everything in moderation and never over ate, but she loved her sweets. She would also proudly remind me that the most she ever weighed was 120 lbs, and that was when she was pregnant with her twins, my mother and uncle.
I haven’t seen 120 lbs since the birth of our first son, but I also believe everything in moderation. Sunday dinners are my favorite meals to cook and sometimes I too like to have “a little something sweet” after eating.
Recently while looking through the clearance racks at Walmart I found these Welcome Home Brands Mini Baking Pans. They are made from oven safe paper and are a perfect size for “a little something sweet” dessert.
I cooked chicken and collard greens for dinner and then decided to make some Jiffy Banana muffins using the mini Baking Pans instead of a muffin tin. Following the box directions I filled each mini pan with 1/2 batter without pre-greasing which wasn’t necessary. After putting them on a baking sheet, they were placed in a pre-heated oven at 400 degrees for approximately 15 minutes.
The mini banana loaf removed easily from the pan, there was no scorching and the bread was delicious, which was made a little more so when topped with banana slices and cherry sauce – just “a little something sweet!”

Hello friends, I hope all is well in your world.
Last week I stopped at Shoprite to pick up a few items for dinner and they had a sale on their pudding cakes, all flavors for $1.99. There were so many choices but I settled on Blueberry.
I made it a little more delicious by grilling it in butter and adding Reddi Wip cream and strawberries. Hey, if you are going to eat dessert, you might as well make it good!
Melt two pats of butter in a pan, add a few slices of cake and let it warm on low heat for 3-5 minutes.
I wanted the grill marks so I used this pan, and am sure it would be just as good on an outdoor grill or in a George Forman Grill.
Top with Reddi Wip cream and a few slices of strawberries, but if you want a few more calories, top with ice cream!

Hello friends, I hope all is well in your world. Now that the heat of the summer is on, the heat of the oven is now off! That however, does not mean that there will be no more cooking or baking in the Blake household. Nope, it just means that the outdoor grill will be used more often and if the desserts don’t come from the freezer they will definitely be no-bake options.
So just in time for the weekend and in celebration of Father’s Day, this is today’s Foodie Feature
No-Bake Mini Strawberry Cheesecakes made with Reddi-Wip.
I used a box of Jello No Bake Cheesecake mix, fresh strawberries and Reddi Wip to create this easy breezy satisfying no bake dessert.
Following the directions on the box I mixed the Graham Cracker crust with butter and sugar, then using a spoon pressed a little of the mixture into the bottoms of 12 muffin cups.
In a bowl, I poured in 1 1/2 cups of milk then added the filling mix, whipped on low for a minute and then on medium speed for another few minutes until thickened.
Topped each Graham Cracker Crust cups with filling and refrigerated uncovered for an hour
Washed, cored and sliced several strawberries to top each mini cheesecake but not before first topping them with some whooshes of Extra Creamy Reddi Wip. I love the sound it makes coming out of the can and love even more the fact that there are only 15 calories per serving, so I added 2 servings of real cream to each!

Hello Friends and Happy Valentine’s Fri-Yay!
Today’s Friday Foodie Feature is Slow Cooked Chicken Cacciatore and Strawberry Shortcake in a Glass, a dessert inspired by Modern Christian Homemaker from last week’s #WWDParty.
I hope you are enjoying your Valentine’s Day, perhaps you received Roses at work and are the envy of all your cubicle mates, or maybe were awaken to an early morning DELIGHT followed up by a bountiful breakfast, no matter what it was, I hope you left some room for a little dessert!
This week’s Slow Cooked meal is Chicken Cacciatore, another easy breezy Crock Pot Meal.
Ingredients:

4 bone in chicken thighs – skin removed

4 chicken drum sticks – skin removed

1 can of Italian Style diced tomatoes or sauce

1 Package of Mushrooms or jar of whole mushrooms drained

1 teaspoon of Italian seasoning or oregano leaves

1 package of frozen onion and peppers (fresh if prefer)
-
1 tsp of minced garlic
-
1/4 cup water
-
2 tablespoons all-purpose flour
-
Linguine or fettuccine or spaghetti pasta
Remove the skin from the thighs and drumsticks which is the worse part of this recipe, next time I will buy skinless chicken! If using fresh mushrooms, wash to remove excess dirt.
Spray Crock Pot with Cooking Spray for easier clean up then put chicken, veggies, tomatoes, garlic and seasoning into the pot.
Cover and cook on low for 6-8 hours depending on Crock Pot model
About 15 mins before serving, prepare pasta according to box directions and remove chicken and veggies from Crock Pot. Place in a serving bowl and cover to keep warm.
Mix flour and water in a small bowl, then add to the liquid in Crock Pot and let cooks for 5 to 10 minutes so it can thicken, then pour over chicken and veggies.
Now on to the best part of dinner – Dessert!
Ingredients:
- Fresh Strawberries
- Dessert Shells
- Chocolate Pudding
- Whipped Cream
Break up a dessert cake putting a few pieces into the bottom of the glass, add some strawberries, a few more pieces of the dessert cake, 1 container of chocolate pudding and top with whipped cream … WhaLaa – Dessert is Done!

Hello Friends, I hope everyone had a nice Father’s Day weekend!
Hubby had a nice one even with a change in dinner plans, but I was able to pull off what I think was a better meal than what we would have had at a restaurant. Yesterday he played a little one-on-one with Malik and fortunately, no injuries were sustained!
Father’s Day Dinner was baked Salmon, Spinach Shrimp Salad and Dill Potato Salad. Daddy’s (not mine) dessert was Lemon Meringue Pie and Talenti Gelato Mediterranean Mint.
Have a fantabulous evening – Smooches!
