Jambalaya in an hour – Veetee Rice Giveaway {spon}

Disclosure: I was provided the Veetee Dine In Rice in order to facilitate this review, however, all opinions are 100% my own.

Hello friends, aren’t you just loving this gorgeous weather?  I definitely am, but more importantly, I am enjoying the longer daylight hours which gives me a chance to spend some time outdoors after work.   Mid-week dinners are now quick and easy especially since I have discovered the many varieties of Veetee Dine In rice.

Veetee Rice Varieties

It’s great that both Hubby and Tayair love rice because making this Jambalaya in under an hour using two types of Veetee Rice made for a yummy mid-week meal.

Jambalaya ingredients

Ingredients:

Veetee Rice – Red Beans & Rice New Orleans Style and Golden Vegetable Rice

1 Package fully cooked Smoked Sausage – diced

1 can diced tomatoes (any flavor)

12 oz bag fully cooked frozen shrimp, deveined, tails removed

16 oz bag frozen peppers and onions

1 Bay Leaf

Cajun Seasoning

Olive Oil

Options: Cayenne Pepper, Hot Sauce

Directions:

Brown the sausage in a heated pan sprinkled with 2 tablespoons of Olive Oil.

Jambalaya in an hour

Add frozen veggies, stir, then allow to simmer for 3-5 minutes until peppers and onions are thawed.  

Add diced tomatoes, Bay leaf and a few sprinkles of Cajun Seasonings, stir again until everything is thoroughly mixed.  Cover and allow to cook on low heat for an additional 5 minutes.

Remove Bay Leaf, add both packages of rice, stir again, cover and cook for 20 minutes, check to ensure rice is not sticking to pan.  If you need more liquid add 1/2 cup of low sodium chicken broth.

Remove lid then add Shrimp, re-cover and cook for 10 minutes or until shrimp is completely done.

Banquet and Chef Boyardee on Rollback at Walmart

Our youngest son, Malik is away at college so I don’t buy as many groceries as I used to, which is saving us a little bit of money.  However, our oldest son, Tayair is living at home while attending college and is hungry when he gets home.  I don’t get home until late and he isn’t willing to wait until dinner is ready, so he’ll find something to eat before then.

Thankfully, I can still save money with Walmart’s Rollback prices on Banquet Frozen Dinners, Pot Pies and Chef Boyardee products, all of which he loves and are easy for him to fix.

The rollback prices on frozen Banquet dinners and pot pies and Chef Boyardee cans makes it easy to save and spend less time in the kitchen. The rollback prices are just $0.80 for each frozen Banquet dinner and pot pie now through February 24, 2015 and $0.75 for each 14.5-15 oz can of Chef Boyardee February 9 – April 6, 2015.

Tasty meals like Banquet salisbury steak and Chef Boyardee raviolis make dinner and in my case pre-dinner easy and delicious! Be sure to head to Walmart and stock up on this great deal while supplies last!
