On Sunday I basically lounged around relaxing however, on Saturday I did have laundry to do, but it was just one load and it was my delicates. I never let hubby wash those so it wasn’t too bad of a laundry day.

Thank you all for your kind words and suggestions regarding my leg, unfortunately there is still a scar which I doubt will ever heal. Thank God is didn’t blister, but the next time, if there is a next time, I’m just going to let the pan fall onto the floor!
This week will be open toe versus closed toe. The weather is finally where it should be so this weekend, I will be pulling out the Spring and Summer shoes so we can get this contest rocking and rolling.

If you have small children, or are more easily susceptible to getting sick, you may be looking for simple changes you can make to boost your immune system. Luckily, there are many ways you can take charge, so take a look at the list below and start integrating these habits into your daily life.
Move More: Shoot for at least 30 minutes of exercise, five times per week. If it is easier, break it up into 10 minute increments and use it as a great way to break up your work day.
Ditch Tobacco: Do not smoke and avoid secondhand tobacco smoke. Period.
Maintain a Healthy Weight: Whether this means losing a little weight or simply maintaining your current healthy weight, being at a healthy weight is good for your health.
Drink Only in Moderation, If at All: Alcohol abuse can lead to immunodeficiency, making you more susceptible to communicable diseases. The less you drink, the better your body will be at fighting invaders.
Get Adequate Sleep: The average adult needs 7-9 hours of sleep per night. So don’t forget to catch your zzz’s to help make your body stronger.

Hello friends and Happy Cinco de Mayo! Yes, I will be going to El Charro Negro for lunch, and if you remember that post, you know that I normally “brown bag” my lunch to eat at my desk. Hello friends, aren’t you just loving this gorgeous weather? I definitely am, but more importantly, I am enjoying the longer daylight hours which gives me a chance to spend some time outdoors after work. Mid-week dinners are now quick and easy especially since I have discovered the many varieties of Veetee Dine In rice.
It’s great that both Hubby and Tayair love rice because making this Jambalaya in under an hour using two types of Veetee Rice made for a yummy mid-week meal.
Ingredients:
Veetee Rice – Red Beans & Rice New Orleans Style and Golden Vegetable Rice
1 Package fully cooked Smoked Sausage – diced
1 can diced tomatoes (any flavor)
12 oz bag fully cooked frozen shrimp, deveined, tails removed
16 oz bag frozen peppers and onions
1 Bay Leaf
Cajun Seasoning
Olive Oil
Options: Cayenne Pepper, Hot Sauce
Directions:
Brown the sausage in a heated pan sprinkled with 2 tablespoons of Olive Oil.
Add frozen veggies, stir, then allow to simmer for 3-5 minutes until peppers and onions are thawed.
Add diced tomatoes, Bay leaf and a few sprinkles of Cajun Seasonings, stir again until everything is thoroughly mixed. Cover and allow to cook on low heat for an additional 5 minutes.
Remove Bay Leaf, add both packages of rice, stir again, cover and cook for 20 minutes, check to ensure rice is not sticking to pan. If you need more liquid add 1/2 cup of low sodium chicken broth.
Remove lid then add Shrimp, re-cover and cook for 10 minutes or until shrimp is completely done.

3S Day ~ Sporting a Sweater, Sunnies and Suede in the Spring
Hello friends, I hope all is well in your world. I don’t know how it is in your neck of the woods, but here in Delaware Spring is taking a long time to settle in. One day it’s cold and the next day it’s hot…just like how I was the first few years of menopause!
Fortunately, the temps have begun to rise into the low to mid 80’s and hopefully they will be sticking around until the holiday. During the last week in April it was chilly in the mornings and then warmer in the afternoons, hence this outfit of the day featuring 3S’ : a short sleeve sweater, suede and sunnies. #OOTD
This dress is one of my spring/summer favorites but it has cap sleeves so I had to top it with a short sleeve sweater. The sweater has been hanging in my 2nd closet for years and is one that the boys gifted me a few Christmas’ ago. If you remember, the suede purse was thrifted and featured in this YouTube video, the open-toe suede shoes were purchased last season from Payless.
