Finally the weather has begun to warm up and next month it will be Memorial Day so you know what that means – it’s time to fire up the grill and BAR-B-QUE!
Even though I haven’t fired up the grill for the season, that didn’t stop me from making these tangy BBQ chicken thighs in the oven for Sunday dinner.
Ingredients
- 8-10 chicken thighs (bone-in, skin on)
- 2 cups of your favorite barbecue sauce
- 1/2 red onion sliced
- olive oil, seasoning salt
Instructions
- Preheat oven to 400 degrees F.
- Coat the chicken on all sides with olive or canola oil and season with salt and pepper or any type of dried seasonings.
- Place the chicken skin side up in a glass pan coated with cooking spray and cover with slices of onion.
- Bake for 25 minutes.
- Remove chicken from oven and turn the temperature of the oven up to 425 degrees.
- Coat the top of the chicken with barbecue sauce using a basting brush. Use rubber tipped tongs to turn the chicken over, being careful not to tear the skin.
- Baste the other side of the chicken, and place back into the oven for another 10 minutes.
- Remove from oven, baste top with barbecue sauce, and put back into oven for 5 more minutes.
- Remove from the oven again and baste one more time, then place chicken back into the oven for an additional 5 minutes or until chicken is crispy, and is fully cooked.
I served the BBQ chicken with boiled Kale and slices of warm cornbread!

Hello Friends and Happy Fri-Yay!
The countdown is on, there are only two more weekends until the Memorial Day holiday which is the unofficial start to summer!!!! Next week my “baby” graduates from High School and if you read yesterday’s post or follow me on FB/Twitter/Google+/Instagram or Pinterest you would have seen a picture of him holding his acceptance letter to Bowie State University – if not, here it is
BTW, I won’t be able to participate in next weekend’s party so please link up from one of the other host’s blogs.
His father and I are so over-the-top excited for him, yet I can feel the separation anxiety creeping into my soul and my heart is beginning to hurt. Parents of college students understand exactly how I’m feeling…please pray for me!

Hello Friends and Welcome to the
Weekend Wind-Down Party!
Can you believe that it’s already the first Friday in May? Memorial Day is right around the corner so I know this week’s party is going to feature a lot of fabulous recipes, fashions and DIY’s to kick off the summer season. Hello Friends and Happy Friday Eve!
I am so excited because tomorrow I will be attending my first Blogger’s Conference – The Blog Workshop. It’s an an online virtual 3-day/3 hour conference with some great topics and speakers and I am psyched!! I expect to gain the knowledge necessary to help me grow my blog and am looking forward to meeting other bloggers as well – will you be there?
The pool is now open and because The Blog Workshop begins in the evenings I’ll have plenty of time to work outside in preparation of the Memorial Day holiday.

Hello Friends and Happy Hump Day Wednesday
Today we officially open the pool for the season and despite the cold temps, Pool Care Specialist will be onsite to reassemble the parts and add the necessary chemicals. Every year I think about purchasing a better pool cover so that the water won’t be too dirty when opened in the Spring. It’s been over 10 years and I still haven’t gotten it but thanks to the mild winter it doesn’t look too bad and by Memorial Day weekend it will be sparkling clear.
We definitely will be getting a new Solar Cover because there is nothing worse than jumping into cold water!

Hello Friends and Happy Fri-Yay!
This is the last full week of April, can you believe that this time next week it will be May 3rd and Memorial Day will be on the calendar? So many things happened this week, some of them good others not so much but I shall not dwell on the negative. Life is so unpredictable, one day everything is “Peachy Keen” and then next your world is turned upside down. I believe that all of us, at one point in our lives has wanted something that someone else had, whether is was as a child or an adult, as a sibling, a parent or friend, and then we realize that “the grass isn’t always greener on the other side”.
Has that ever happened to you?
Last evening, hubby and I attended a”Green Tie Friendraiser“ at The Chase Center on the Riverfront hosted by The Delaware Financial Literacy Institute. It was wonderful event for a worthy cause and I will provide more details in a separate post. During the evening we met some great people and had a chance to unwind and mingle after a long day at work. I was also presented with a fantastic opportunity which I will reveal later once I get more information.
It was a wonderful way to jump start the weekend and I hope you all have a happy and safe one!

I hope everyone had a safe and enjoyable Memorial Day Holiday weekend, the unofficial start of summer 2012. My men and I had a nice weekend and I spent most of my time outdoors working in the yard and opening the pool. The temperature was in the low 90’s and I didn’t realize how intense the sun was nor did I see the poison ivy intertwined in the tree branches that I cut. Despite the results of these two oversights I had a great time grilling and spending time outdoors which for me is always relaxing.
It is now tIme to get my mind right in preparation for another short work week which is always more hectic than a regular 5-day week!

During my drive home I listen to WDEL 1150AM and yesterday it was announced that they would be giving away FREE American Flags at various locations throughout the state. This morning heading back home I passed their tent at Arner’s Restaurant on Rt 13 south and because the holiday traffic hadn’t kicked into high gear, I made a U-turn and went back.
Thank you WDEL 1150AM for the Flag and THANK YOU VETS for bravely serving our country!
