Healthy Leftover Turkey Recipe – Mojo Turkey Taco

Hello friends and Happy Black Friday.  I trust you all had a wonderful Thanksgiving, a day filled with with plenty of food surrounded by family, friends and fun.

However, if like us, you had more food than family and friends and are now looking at a lot of leftover turkey, here’s a change to the classic turkey sandwich.  This healthy recipe can be found online at Health.com.

Ingredients

  • 1 1/2 tablespoons fresh lemon juice
  • 1 1/2 tablespoons fresh orange juice
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon hot chili powder (optional)
  • 1/8 teaspoon minced garlic
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon fat-free sour cream
  • 2 cups (about 12 ounces) cooked, coarsely chopped turkey breast
  • 8 (6-inch) flour tortillas
  • 1 cup drained and rinsed canned black beans
  • 1/2 cup bottled salsa
  • 1 cup shredded iceberg lettuce
  • 1/2 cup pre-shredded reduced-fat 4-cheese Mexican blend cheese
  • 1/2 cup diced peeled avocado

Preparation

1. Using a whisk, mix first 7 ingredients (through sour cream) in a small bowl. Toss with turkey. Set aside.

2. Heat the tortillas according to package directions.

3. Spoon 1/4 cup of the turkey mixture onto each tortilla. Then top each tortilla with 2 tablespoons drained and rinsed black beans, 1 tablespoon bottled salsa, 2 tablespoons shredded iceberg lettuce, 1 tablespoon shredded cheese, and 1 tablespoon diced peeled avocado.

4. Fold tortilla around taco mixture and serve. Mojo Turkey Tacos

 

I made this for my men and they loved it, it was a great treat to eat while watching football, and to save on my calories, I just added some of the turkey mixture to a salad.

Black N Bootie

Hello friends, the countdown to turkey day is on?  Do you believe that I didn’t realize that Thanksgiving was this Thursday until just the other day.  I kept thinking we had another week.  

Anywho, here we are once again, a Sunday Stylin Roundup and in keeping with last week’s theme, today it’s Black N Bootie.  I wore my booties with two different outfits both of which I love but of course the leopard prints are my favorites. Sunday Stylin Roundup

This vest was thrifted from Goodwill about 2 years ago, however, I’ve only worn it one other time. It is actually covering this Avon embroidered chambray shirt.

The black suede booties are Unlisted purchased a couple of years ago from The Shoe Dept in the Exton Mall.  Necklace is from Jewelrymax.net and bangles from Rugged Wearhouse.

In both outfits I am wearing closet staples, black slacks, skirt and turtleneck which personally are not my favorites but the weather called for it.  I wore the leopard print scarf to break up all the black.  This outfit actually received quite a few compliments from co-workers.

I am using my old camera which for some strange reason is not taking as good of pictures as it used to, oh well I guess I’ll start using the Coolpix L830, however, it uses 4-AA batteries and I hate when batteries start to drain.  Next week, let me know if you notice a difference.

Farmer’s Market Friday

Hello Friends and Happy Fri-Yay!

Today is “Black Friday”, and in the United States it’s the day after Thanksgiving, noted as the first day of Christmas shopping. Crowds of consumers are drawn to special offers by retailers and some people even lose their minds!

Unfortunately or fortunately, depending on your point of view this year some retailers began their Black Friday sales Thursday night!

Die hard Black Friday shoppers are those who after Thanksgiving dinner will leave the warmth of their homes and drive to stores to camp out overnight for the latest, lowest priced gadget. 

Are you a Black Friday Shopper?  If so, more power to ya just don’t forget to wear comfortable shoes, carry snacks and a bottle of water in a small purse and check out this 2013 Black Friday Shopping Guide.

I don’t like shopping in the holiday madness and prefer to stay local which is why I like places like the Dutch Country Farmers Market in Middletown. My sons are older so there’s no need to wait until Christmas to buy them gifts, those days of hunting for Tickle Me Elmo, Furby or Star Wars memorabilia is long behind me.  I can now enjoy leisurely shopping and watch others stress – lol!

OOTD – Sunday Shopping

Hello friends and Happy Sunday I hope you had a wonderful weekend and are anxiously looking forward to next week. This year we are not having a big Thanksgiving dinner because my son has to work and my mother-in- law is hospitalized battling intestinal cancer.
I ask that you keep her in your thoughts and prayers during this time, thank you.

Although we are not having a big Thanksgiving dinner I still needed to grocery shop and today it wasn’t a chore. I did however, feel sorry for some running around quickly filling their carts like crazy spending way too much!
My casual attire along with my casual attitude allowed me to better compare prices, use a lot of coupons and save a little money.
